POMEGRANATE-KEY LIME VODKA COCKTAILS
You can substitute 1/4 cup regular lime juice for the key lime juice if you want. You can also prepare the syrup a day ahead and store in the refrigerator until ready to use.

Steps:
- Combine sugar and 1/4 cup water in a small saucepan; bring to a boil. Reduce heat, and simmer 2 minutes or just until sugar dissolves. Remove from heat; cool.
- Combine sugar syrup, club soda, pomegranate juice, vodka and lime juice. Place crushed ice in a martini shaker; add about 3/4 cup pomegranate mixture. Cover and shake. Strain into a glass. Garnish with lime slice, if desired. Repeat procedure with remaining pomegranate mixture.

- To make the simple syrup, combine water sugar and the squeezed limes into a sauce pan. Bring to a boil and stir until the sugar is completely dissolved. Remove from heat and take out the lime halves. Take the juice from the lime and muddle with the mint leaves and add this to the simple syrup and stir.
- To make the cocktail combine the simple syrup, pomegranate juice and vodka in a cocktail shaker and shake well. Pour over ice into two glasses and top with soda water. Garnish with mint sprigs and pomegranates.
