POOR MAN'S PIE
This is an awesome recipe that I got from my coworker. It can be modified in many ways, including for the slow cooker. It's a simple meal of things you often already have on hand that really sticks to the bones, and it can also be a fun way to use up some leftovers.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Cook and stir ground beef in a large skillet over medium heat until browned and crumbly, about 10 minutes; season with salt, black pepper, garlic powder, and onion powder. Drain excess grease. Stir cream of mushroom soup and green beans into ground beef and bring to a simmer.
- Spread ground beef mixture into a 9x13-inch casserole dish. Spread mashed potatoes evenly over ground beef mixture. Sprinkle Cheddar cheese over the top.
- Bake in the preheated oven until heated through, about 20 minutes.

POOR WOMAN'S PIE
A simple, quick and tasty dinner that uses ingredients most of us have on hand. I created this for dinner when it was just DH and I. He loved it so much he said I had to post it, so let me know what you think!

Steps:
- Preheat oven to 350.
- In a pan, brown hamburger along with onion and pepper.
- Drain.
- Return to pan and add veggies, soup, and 1/2 cup water.
- Stir until well mixed.
- While browning hamburger, in a different pan add 1 1/2 cups water, milk, and butter and bring to boil.
- Then add package of potatoes, and fluff with fork.
- In a greased 2 quart casserole, pour hamburger mixture first.
- Then cover with half of cheese. Add potatoes on top.
- Then add remainder of cheese.
- Bake for 15 minutes, or until cheese is melted and bubbly.

POOR WOMAN'S TAGINE
Ok, well, it's not really a tangine but it is a slow cooked dish! It's my variation on LadyPit's brown rice and lentil casserole. However, since it is significantly different and vegan to boot, I thought that it would be good to post. In the winter, if you use canned tomatoes, use the juice from the can to replace some of the water for extra tastiness.

- Preheat the oven to 300°F.
- Combine all ingredients in a baking dish (I use a pyrex mixing bowl) and cover with foil.
- Bake covered for 1 hour and 30 minutes.
- Let sit covered for at least 15 minutes before eating. Even better the next day, after the flavors have developed a bit more.

POOR MAN'S PIE
This is a recipe that my mom used when they didn't have much but milk and sugar and flour. There are several recipes that I found on-line but finally found her old recipe. This is simple but very tasty.

- 1. Have a pie crust prepared.
- 2. Cook over heat all the above ingredients except the vanilla. When the mixture thickens, add vanilla and pour into pie crust.
- 3. Let cool and serve with Cool Whip.
COMFORTING POOR MAN'S SHEPHERD'S PIE
I got this recipe from a friend of mine years and years ago. It's one of my DH's favorites. It's been a while since I made it though, so I'm guessing at the time to bake.

Steps:
- Make mashed potatoes using the 10 potatoes. I boiled my potatoes, drain and then mash wtih butter and milk to a smooth consistency.
- While the potatoes are cooking, brown the ground beef until thoroughly cooked. Drain and rinse off grease.
- Grease a casserole or baking dish with butter or spray with Pam.
- Once potatoes are mashed, line the bottom and sides of the casserole dish with a little under 2/3 of the potatoes. Make it look like a crust.
- Mix together the ground beef and creamed corn. Pour into the casserole as the filling.
- Top the filling with the remaining mashed potatoes, spreading to the sides and having it meet the "crust".
- Bake in a 400 degree oven until the top is lightly browned - about 30 to 45 minutes.
POOR MAN'S PIE
I searched this out originally for a friend who wanted to recreate a pie from her childhood. Now I'm posting it for a request on the boards. I haven't made it, so let me know what you think about it.

Steps:
- Preheat oven to 400°F.
- Line a large 9-inch pie plate with rolled out pastry dough, prick with a fork and bake for 10 minutes.
- Remove from oven and reduce heat to 350°F.
- In a small bowl, combine sugar, flour and salt.
- Mix well and spread evenly over the bottom of the crust.
- Warm cream in the microwave, (warm, not hot) and then carefully pour the warmed cream over the sugar mixture, completely covering it.
- In bits, dab butter over the cream.
- Bake at 350°F for 45 minutes to an hour, or until golden spots form on the top.
- The filling will seem liquid but will become firmer as it cools.
GRANDMA'S POOR MAN'S PIE
This is an even simpler recipe that I grew up with (I've looked at the other recipes for Poor Man's Pie and Sugar Cream Pie - the other name for this type pie.) My grandmother's recipe was a 2-2/3-3 formula. It was called Poor Man's Pie because farmers always had the ingredients handy.

- Mix the cream, sugar, and flour.
- Pour into an unbaked 8" pie shell.
- Float several thin pats of butter on top.
- Sprinkle with ground nutmeg.
- Bake at 350º for 30-45 minutes or until top is a nice golden brown.
- Chill, then refrigerate until ready to serve.
