POP TART TRIFLE

When you think of a trifle, you may think of a fancy and elegant dessert. I got this recipe quite a few years ago from a "sample lady" at the supermarket. Though she made it with strawberry Pop Tarts and strawberries, you could use blueberry Pop Tarts and blueberries for variation. This is a fun trifle- one for the kids (of all ages, of course!)

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Line baking sheets with parchment paper.
  • Unroll the pie crusts, place on a lightly floured work surface, and roll the crusts slightly with a rolling pin to square the edges. Cut each crust into 8 equal-sized rectangles. Place about 2 teaspoons of strawberry jam in the center of 8 squares, and spread the jam out to within 1/4 inch of the edge of the pastry square. Top each with another pastry square, and use a fork to crimp the squares together, sealing in the jam. Use a knife to trim the pastries, if desired. Move the filled pastries to the prepared baking sheets.
  • Bake in the preheated oven until the edges are lightly golden brown, about 7 minutes. Allow to cool on the baking sheets. Meanwhile, stir together the confectioners' sugar, milk, and vanilla extract in a bowl to make a spreadable frosting. Spread the cooled tarts with frosting and sprinkle with colored sugar.

  • Classic British Trifle. No Christmas table is complete without a trifle. A true classic trifle should have a base layer with fruit or sherry soaked cake, followed by a nice thick layer of creamy custard.
  • Death by Chocolate Trifle. If you’re going to stray from the classic, it should be with this rich and over-the-top chocolate trifle. If you’re looking to make this as fast as possible, buy some brownie bites and instant pudding.
  • Banana Pudding Trifle. If you ever go to New York City, Magnolia Bakery is an absolute must-visit. Their banana pudding is legendary and comes in a variety of flavors.
  • Peanut Butter Brownie Trifle. Other than the Cool Whip, everything in this recipe is homemade. So if you’re looking to impress, read on! Making peanut butter pudding is dangerously easy.
  • Lemon Blueberry Trifle. This trifle is more like a deconstructed lemon and blueberry cake. Rather than layers of pudding, jelly, and cake, it uses a lemonade-infused angel cake, lemon glaze, and Cool Whip.
  • Pumpkin Gingerbread Trifle. My inner pumpkin spice latte-drinking, sweater weather-loving self is giddy with excitement for this trifle. Glorious layers of soft gingerbread cake, pumpkin pie infused instant pudding and Cool Whip marry into one fall favorite you will fall in love with.
  • Easy 5-Ingredient Black Forest Trifle. If you’re looking for something easy but impressive, this recipe is for you. Made with cherry pie filling, boxed brownies, Cool Whip, instant chocolate mousse, and Skor candy bars, the only hard part is not eating everything before it gets in the dish.
  • Triple Layer Coffee, Caramel, Chocolate Mousse Mini Trifle. Since we’re going against the grain with these trifles, let’s go all the way. After all, who says they have to be big desserts for a crowd?
  • Irish Cream Brownie Trifles. Smooth and creamy Irish Cream in a pudding? Sign me up! These little minis are to die for. They’d be even cuter served in a whiskey tumbler.
  • Strawberry Champagne Trifle. These six-ingredient minis are a real luxury in a glass. Strawberries and champagne are a match made in heaven, but have you ever tried champagne and pudding?

  • This is the same recipe as my homemade pie crust. See step-by-step photos if you need visuals for making the pastry. I usually make the pastry the night before. First, mix the flour and salt together in a large bowl. Add cold unsalted butter and shortening. Using a pastry cutter or two forks, cut the butter and shortening until the mixture resembles coarse meal (pea-sized crumbles with a few larger bits of fat is OK). Measure 1/2 cup of water in a glass. Add ice. Stir it around. Slowly drizzle in the very cold water 1 Tablespoon at a time, stirring with a large spatula after every Tablespoon of water that you add. Do not add any more water than you need to. Stop adding water when the dough begins to clump.
  • Roll out the dough on a floured work surface. The dough should come together easily and should not feel overly sticky. Form the dough into a ball. Divide in half. Flatten each half into 1-inch thick discs using your hands. Wrap each tightly in plastic wrap. Refrigerate for at least 2 hours (or up to 5 days or in the freezer for up to 3 months).
  • Remove 1 chilled dough disc from the refrigerator and allow it to sit at room temperature for 15 minutes. This will help make the dough easier to roll and work with. Keep the other disc in the refrigerator. After 15 minutes, place disc onto a lightly floured work surface, and roll it into a rectangle about 1/8 inch thick and 9×12 inches in size. Trim the sides as needed. Always be gentle with your pastry dough. You don’t want it to tear. Cut each piece of dough into thirds and each third into thirds again. You will end up with 9 rectangles, each measuring 3×4 inches. Use a ruler to help make this process easier and more accurate.
  • Place each of the 9 rectangles onto a baking sheet lined with parchment paper or a silicone baking mat. The pop-tarts will not spread in the oven much, so you may place them relatively near one another. Place the baking sheet in the fridge. Roll 2nd disc out into a rectangle and cut into 9 even rectangles like you did with the first half of the dough. These nine rectangles will be the tops of your homemade pop-tarts. Place the baking sheet into the refrigerator as you make the brown sugar cinnamon filling.
