OLD-FASHIONED POPCORN BALLS

Popcorn always make a crowd-pleasing snack...but you can make it into a chewy, sweet delight with this classic recipe.-American Pop Corn Co., Sioux City, Iowa

Old-Fashioned Popcorn Balls image

Steps:

  • Place popcorn in a baking pan and keep warm in a 200° oven. Meanwhile, in a large saucepan, stir together the sugar, corn syrup, water, butter and salt. Cook over medium heat, stirring constantly, until mixture comes to a boil. , Continue cooking without stirring until the temperature reaches 270° on a candy thermometer. Remove from the heat. Add vanilla; stir just enough to mix. Slowly pour over the popcorn. Cool just enough to handle. Shape with buttered hands.

2 quarts popped popcorn
1 cup sugar
1/3 cup light or dark corn syrup
1/3 cup water
1/4 cup butter
1/2 teaspoon salt
1 teaspoon vanilla extract

Steps:

  • Pop one bag of microwave butter popcorn and place contents into a large Ziploc bag.
  • Pour in one 750mL bottle of Bacardi Ocho Rum to infuse overnight at room temperature. Seal competely.
  • After one night, place the bag in the freezer until all fats and solids are frozen. (This willl take approximately 4 to 6 hours.)
  • After all fats and solids are frozen, cut a small hole in the bottom of the bag and strain through a coffee filter. Using multiple coffee filters will yield best results.
  • Place large ice cube into a tumbler or old-fashioned glass.
  • Add popcorn-infused rum, Angostura bitters, orange bitters, and demerara sugar syrup to a mixing glass, fill with ice and stir until diluted and well chilled. Strain into prepared glass and garnish with fresh popcorn and orange zest.

1 bag microwave butter popcorn
750-ml bottle Bacardi Ocho Rum
2 oz. popcorn-infused rum
1 dash Angostura bitters
1 dash Regan's orange bitters
½ oz. Demerara Sugar Syrup (2:1, see note at top)
Garnish: Orange zest or twist and freshly popped popcorn

OLD FASHIONED CARAMEL POPCORN

This is so yummy, an old family recipe. I use it at christmas as gifts. I place it in old but decorated coffee tins and give it to teachers and bus drivers as gifts, not to mention my Mom, brother and Grandma who wait for it. My kids love this stuff and it makes a great Friday night movie treat it you want to try something different. You can add nuts, but I never do!!

Steps:

  • In a saucepan mix butter brown sugar, corn syrup and vanilla and bring to a boil.
  • Boil for 5 to 6 minutes stirring occasionally.
  • Remove from the heat and stir in the baking soda until the mixture has puffed up.
  • Allow 1 minute to rest.
  • Placed popped popcorn in a large baking dish.
  • (I use my very large turkey roasting pan without the lid.) Pour mixture over popcorn and stir until well coated.
  • Bake at 300 degrees for 10 minutes.
  • Stir well to make sure the bottom doesn't burn, Bake for another 10 minutes.
  • Pour onto a large surface to cool.
  • (I cut a green garbage bag in half and cover my dining room table with it before pouring out the popcorn onto it. It saves on clean up.) Break apart to serve.

I made these with my grandmother for years. They are soft and delicious- and NOT made with marshmallow fluff! If using bag popcorn- make sure it is not buttered and use 2-3 bags.

Steps:

  • Heat popcorn in oven at 300 degrees.
  • Stir and cook sugar, karo, water, butter and salt until sugar is dissolved.
  • Continue cooking WITHOUT stirring until mixture reaches 270 degrees on candy thermometer, (can use a kitchen thermometer) or until syrup forms a soft ball in cold water.
  • Add vanilla and pour slowly over popcorn.
  • Mix well.
  • Dip hands in water and form balls.
  • Wrap in plastic wrap and enjoy!
