Pulled Pork Sandwich with BBQ Sauce and Coleslaw image

Steps:

  • For the BBQ sauce: Combine the ketchup, mustard, brown sugar, garlic, cider vinegar, Worcestershire, Cajun seasoning and 1/2 cup water in a small saucepan over medium heat. Bring to a boil, stirring until ingredients are completely incorporated. Reduce the heat to low and simmer gently until the flavors have melded and sauce has thickened enough to coat the back of a spoon, 30 to 40 minutes.
  • Remove from the heat and let cool to room temperature. If not using right away, cover and refrigerate for up to 2 weeks.
  • For the pulled pork: Preheat the oven to 275 degrees F.
  • Spread out the onions and garlic in an even layer in a roasting pan and pour in the chicken stock. Combine the Cajun seasoning and brown sugar in a small bowl. Pat the pork shoulder dry with paper towels and then rub all over with the spice mixture. Set the pork on top of the onions and garlic and cover the roasting pan with foil. Transfer to the oven and cook until the pork is fork tender, 6 to 8 hours.
  • Remove the pork to a cutting board to cool. Strain the cooking liquid through a fine-mesh sieve and reserve.
  • If the pork has a bone, remove and discard it. With two forks, shred the meat into bite-size pieces, discarding any large pieces of fat. Return the shredded meat to the roasting pan. Add 2 cups of the BBQ sauce and a bit of the reserved cooking liquid if too dry.
  • For the coleslaw: Combine the red and green cabbage, carrots and red onions in a large bowl. Whisk together the mayonnaise, cider vinegar, sugar, and some salt and pepper in a medium bowl, and then add to the cabbage mixture. Mix well to combine. Taste for seasoning; adjust with more salt, pepper or sugar as needed.
  • Serve the pulled pork on buns topped with coleslaw.

I first came across gochujang at an amazing dumpling and bibimbap restaurant in Korea Town in New York City. I loved its smoky-spicy subtle sweetness and wanted to get my hands on it to slather it on anything. I knew pork cutlet and a crunchy, refreshing slaw would pair perfectly with this chile paste! I put a little gochujang in the cutlet coating and more in the sauce, which is really the star of the show here. I've even made sure you have some leftover so you can use it for days to come as a marinade or dressing. Feel free to swap out the pork for chicken. No matter how you enjoy it, I promise your family is going to love this recipe!

Gochujang Pork Cutlet Sandwiches with Purple Slaw image

Steps:

  • Combine the cabbage with the onion in a large bowl. Season with salt and pepper and toss to combine. Add the lime juice and zest, olive oil, sesame oil, soy sauce, the 1 teaspoon rice vinegar and 1 teaspoon honey and toss to evenly coat. Set aside to let all the flavors infuse.
  • Prepare 3 shallow bowls or pie plates. In the first bowl, whisk together the flour with 1 tablespoon salt. In the second, whisk together the egg with 1 tablespoon water and 1 tablespoon of the gochujang. In the third bowl, stir together the panko and 1/4 cup of the sesame seeds.
  • Place 1 pork chop in between two sheets of plastic wrap or parchment paper and pound with a meat mallet or heavy-bottomed skillet until the pork is 1/4 inch thick. Repeat with the remaining pork chops.
  • Working in an assembly line, dip the pork into the flour mixture, shaking off the excess, then into the egg mixture, and finally, coat in the breadcrumbs, pressing to make sure the pork is thoroughly coated.
  • Add 1/2 inch neutral oil to a large skillet and heat over medium heat until shimmering. Fry the pork until crispy and browned, 2 to 3 minutes per side, moving the pork around to ensure it cooks evenly. Transfer to a wire rack set inside a rimmed baking sheet or paper-towel lined plate and immediately season with salt.
  • Melt the butter in a small saucepan over medium heat. Add the garlic and remaining 1 tablespoon sesame seeds and cook, stirring, until fragrant, 1 to 2 minutes. Remove from the heat and set aside.
  • Whisk together the 2 tablespoons honey with the remaining 1 tablespoon rice vinegar in a small heatproof bowl. Add the 1/4 cup gochujang and whisk until combined. Whisk in the butter mixture until smooth. Measure out 2 tablespoons of this sauce into another small bowl; reserve the rest for another use. Add the mayonnaise to the small bowl and stir together until smooth.
  • Spread the gochujang mayo on both sides of the bread. Fill each sandwich with 1 pork cutlet and some of the purple slaw and serve immediately. Enjoy!

Pulled Pork Sandwich with Black Pepper Vinegar Sauce and Green Onion Slaw image

Steps:

  • For the Dry Rub: Add all the dry rub ingredients into a medium-sized bowl and stir until thoroughly combined.
  • For the pork shoulder: Place the pork, fat side up, on a clean baking sheet. Season the pork on all sides with salt and pepper then rub the dry rub all over the pork, pressing into the meat. Cover the pork with plastic wrap and place into the refrigerator for 7 hours.
  • Black Pepper Vinegar Sauce: Place all the ingredients into a blender and blend until emulsified. Add water if the sauce is too thick.
  • Green Onion Slaw: Place the green onions, vinegar, chiles, mayonnaise, salt, pepper and oil into a blender and blend until emulsified. Place the cabbage and red onions in a bowl, add the dressing and stir until combined. Fold in the cilantro and season with salt and pepper, to taste.
  • For the pork shoulder: Remove the pork from the refrigerator 30 minutes prior to cooking. Following manufacturer's instructions and using lump charcoal and 1/2 cup drained wood chips for a smoker, or 1 cup for a barbecue, start fire and bring temperature of smoker or barbecue to 225 degrees F to 250 degrees F. Place the pork on the rack in smoker or barbecue. Cover and cook until an instant-read thermometer inserted into the center of the pork reaches 165 degrees F. Turn pork every 45 minutes, about 6 hours total. If using the smoker, after 2 hours place the pork into the smoker pan and fill halfway with chicken stock. (This is to prevent the shoulder from drying out.) Add more charcoal, as needed, to maintain 225 degrees F to 250 degrees F and more wood drained wood chips (1/2 cup for the smoker or 1 cup for the barbecue with each addition) to maintain smoke level. Transfer pork to a clean rimmed baking sheet. Let stand until cool enough to handle. Shred into bite-size pieces. Mound on platter and toss with most of the Black Pepper Vinegar Sauce, reserving the rest for drizzling the bun. Pour any juice from the baking sheet over the pork.
  • For assembly: Drizzle the sauce on the top and bottom of the bun. Top the bottom bun with the meat, another drizzle of sauce, Green Onion Slaw and finish with the top of the bun.

You'll roast a dry-rubbed pork shoulder in the oven until it's pull-apart tender, 3 or 4 hours that you can spend doing other things while your kitchen fills with the aroma of the cooking meat. Then you'll assemble a quick slaw and simmer a tangy barbecue sauce for about 10 minutes before putting it all out on the table with soft rolls. Serve the combination warm, at any time of the year, for a weekend project well worth an afternoon's work.

Steps:

  • Assemble the spice rub for the pork: In a dry, small skillet over medium-low heat, toast coriander, cumin and peppercorns until fragrant, 1 to 2 minutes. Using a spice grinder or mortar and pestle, grind toasted spices into a fine powder. Transfer to a bowl and mix with salt, mustard powder, chile powder and sugar.
  • If your roast is tied up, untie it. Massage meat generously with spice rub. If you have time, let meat rest for an hour or two at room temperature, or refrigerate for several hours or overnight.
  • Heat oven to 300 degrees. Place pork in a baking pan and roast for 3 to 4 hours or until meat is pull-apart tender and internal temperature reads 200 degrees on a meat thermometer. Let meat cool for at least 30 minutes before pulling it apart and shredding with your hands or two forks. (This works best when the meat is warm but not hot.)
  • Prepare the barbecue sauce: Combine ingredients in a medium pot. Simmer over medium-low heat for 15 to 20 minutes, stirring occasionally, until sauce has deepened in color. Season with more hot sauce if you like. Add two-thirds of the sauce to meat and toss to coat, adding more sauce as needed. (Any leftover sauce will keep for at least 2 weeks in the refrigerator.)
  • Make the slaw: Combine cabbage, onion and jalapeño in a large bowl. In a small bowl, whisk together mayonnaise, vinegar, olive oil, salt and pepper. Add dressing to cabbage and toss well.
  • Serve pulled pork with slaw, buns and hot sauce on the side, letting people assemble their own sandwiches.
