PORK CHOPS WITH HOPPIN' JOHN

This is an easy top of the stove meal, and another way to make pork chops. Another way is use red beans and rice, substitute a 15-16 oz can of red kidney beans, drained, for the black-eyed peas.

Pork Chops with Hoppin' John image

Steps:

  • Brown pork chops in skillet; if thick, simmer slowly, covered, to partially cook. Lift out chops and pour all fat from skillet.
  • Add remaining ingredients and place chops on top. Bring to a boil. Stir; cover and lower heat.
  • Cook 20-25 minutes or until rice is tender, most of liquid is absorbed and chops are done.

Steps:

  • Thinly slice 3 scallions. Heat 2 tablespoons butter in a large skillet; add the scallion whites, 2 ounces diced smoked ham, 1 diced celery stalk, 1/2 diced green bell pepper, and salt; cook, stirring, 6 minutes. Add 2 minced garlic cloves and a pinch of cayenne; cook 1 minute. Add 10 ounces thawed frozen black-eyed peas and 1 cup chicken broth; simmer 8 minutes. Stir in the scallion greens. Serve over rice if using.

  • Combine molasses, bourbon (or apple juice) and mustard in a small bowl. Season pork chops with 1/2 teaspoon each salt and pepper, then brush with half the molasses glaze.
  • Heat 1 tablespoon oil in a large cast-iron or other broiler-safe skillet over medium-high heat. Add the pork chops and cook until golden brown, 2 to 3 minutes per side. Transfer to a plate.
  • Add the remaining 1 tablespoon oil to the pan. Add bell pepper, onion and garlic; cook, stirring occasionally, until the vegetables start to soften, about 4 minutes. Add black-eyed peas, paprika, thyme and the remaining 1/4 teaspoon each salt and pepper. Cook for 2 minutes. Place the pork chops on top of the peas and pour in any accumulated juice. Brush the chops with the remaining glaze. Place the pan under the broiler. Broil until an instant-read thermometer inserted into a chop registers 145 degrees F, 2 to 5 minutes.
