PORK CARNITAS FRITTATA
What a fantastic way to have carnitas any time of the day or night! If you do not care for cilantro, you may use chopped parsley in it's place. This is great for large groups of friends or small get-togethers. Here's a tip: I buy Pork Butt Roasts, bone-in. All you have to do is remove the bone. You just take a sharp knife and grab ahold of the bone, take your knife and just run it around the bone. It's so easy, I know you can do it. Those pork butt roasts, sometimes called Boston Butt Roasts, are really inexpensive. Much cheaper than pork chops. You are paying for the bone, but it's so easy to take out. And, it's a very flavorful piece of meat. That's all I use for my Mexican food recipes.

Steps:
- Saute pork, 3 tablespoons onions and garlic in 2 tablespoons butter in small skillet over low heat.
- Saute till onion is soft, about3 to 4 minutes. Add lime juice and remove from heat and set aside.
- Melt remaining 1 tablespoons butter in large nonstick, oven-proof skillet over medium heat. While butter is melting, whisk eggs, water, salt together in large bowl till light and fluffy. When butter is bubbly, pour 1/2 of egg mixture into skillet. Cover and cook till eggs are set on bottom (they may still be runny on top).
- Sprinkle pork mixture evenly over eggs. Carefully pour remaining eggs over pork, cover and place in preheated 350°F oven for about 12 to 16 minutes, or until eggs are set. Remove from oven. Sprinkle with cheese and return to oven till cheese is melted, approximately 7 to 10 minutes.
- Remove from oven and sprinkle with cilantro leaves, tomato and remaining 1 tablespoons onion. Let set 5 minutes before cutting.

SWEET AND SPICY PORK WITH APPLES IN UNAGI SAUCE
Spicy pork recipe with apples and bell peppers in a unagi (fish) sauce. Serve with white or brown rice.

- Heat the peanut oil in a large skillet over low heat. Stir in the ginger, brown sugar, and chili powder. Cook and stir for several minutes until the brown sugar has melted and the ginger is fragrant. Add the onion, red bell pepper, yellow bell pepper, and garlic. Increase heat to medium and continue cooking until the onion has softened and turned translucent, about 7 minutes.
- Stir the soy sauce, unagi sauce, paprika, mirin, and coconut extract into the vegetable mixture; bring to a simmer. Add the pork cubes and chicken stock; return to a simmer. Reduce heat to medium-low, cover, and simmer until the pork is tender and no longer pink in the center, about 15 minutes.
- Dissolve the cornstarch in the water; stir into the simmering pork. Add the apple and orange cubes; cover and cook until the apple is becoming tender, about 5 minutes. Stir in the basil, green onions, and black pepper; cook 2 minutes more before serving.

- Combine salt, ginger, nutmeg and cinnamon; rub over roast. Place roast, fat side up, on a rack in a shallow roasting pan. Insert a thermometer. Bake, uncovered, at 325° for 2-1/2 hours or until thermometer registers 160°. Cover and let stand 15 minutes before slicing. , In a medium skillet, combine the first six spiced apples ingredients; bring to a boil. Reduce heat and simmer, uncovered, until slightly thickened. - Preheat the oven to 425 degrees F (220 degrees C). Spray a 9x13-inch baking dish with cooking spray.
- Mix together 1 tablespoon ginger, brown sugar, 1 teaspoon chili powder, salt, and pepper in a bowl to create a rub. Rub combined seasonings on all sides of the pork tenderloins, using the entire amount.
- Place apples and sweet potatoes in the bottom of the prepared pan; dot with butter.
- Mix together apple cider, lime juice, garlic, 1/2 teaspoon ginger, 1/8 teaspoon chili powder, garam masala, salt, and pepper in a bowl. Pour over apples and sweet potatoes and place tenderloins on top.
- Bake in the preheated oven for 20 minutes. Ladle cooking liquid over apples and sweet potatoes, turn tenderloins over, and continue baking until pork is slightly pink at the center, about 20 minutes longer. A meat thermometer placed in the center of the thickest tenderloin should read 145 degrees F (63 degrees C).
- Remove apples and sweet potatoes to a serving platter using a slotted spoon. Place tenderloins on top and cover with aluminum foil.
- Pour cooking liquid from the baking dish into a 1-quart saucepan. Heat over medium-high heat until liquid comes to a boil. Boil, stirring occasionally, until the mixture is reduced by one half, 10 to 15 minutes.
- Drizzle sauce over pork, apples, and sweet potatoes. Slice tenderloins and serve.

- Mix the first five ingredients. Cut tenderloin crosswise into eight slices; pound each with a meat mallet to 1/2-in. thickness. Sprinkle pork with seasoning mixture., In a large nonstick skillet, heat butter over medium heat. Add apple; cook and stir 3-4 minutes or until crisp-tender. SPICY MAPLE GLAZED PORK CHOPS WITH APPLE GINGER CHUTNEY
Steps:
- Combine the stock, apple juice, sugar and peppercorns in a medium saucepan over high heat and reduce to 3 cups. Season to taste with salt and strain through a fine strainer.Mix all ingredients until well combined.
- Preheat oven to 400 degrees F. In a small bowl, combine the chile powders and garlic.
- Season the pork loin to taste with salt and pepper and rub all surfaces with the chile mixture. In a large roasting pan, roast the loin until medium rare, about 40 minutes.
- When cool enough to handle, cut between the bones into 8 chops. In a heavy ridged grill pan, sear the chops 3 minutes on each side until grill marked. Place on a serving platter and brush with maple glaze. Serve with sauce and chutney on the side.
- In a large saucepan over medium heat, melt the butter and saute the onion and jalapeno until the onion is translucent.
- Add the ginger, orange zest, orange juice, vinegar, brown sugar and honey and cook until the sauce is reduced by half and has a glazed appearance. Reduce the heat to low, add two thirds of the apple slices, and cook until the fruit is just tender.
- Turn off the heat and gently fold in the remaining apples and the orange segments. Pour the chutney into a bowl and allow to cool to room temperature.
- Mix in the cilantro, red bell pepper and salt and pepper to taste.
PORK AND POTATO FRITTATA
A satisfying dish tha tmy family finds perfect for any time of day. Here is the original recipe I started with years ago (not sure which family kitchen it in which it originated). Since then we have swapped out stir-fry veggies and added mushrooms, brocolli, spinach, asparagus, onions, what ever was handy or looked fresh in the store. To elimiante about 100 milligrams of cholesterol the whole eggs can be replaced with 1 cup of cholesterol free egg whites.

SPICED PORK FILLET WITH SHALLOTS & APPLE

- Heat oven to 220C/200C fan/gas 7. Season the pork well and roll the fillet in 1 tbsp of the garam masala. Heat the oil in a frying pan and brown the pork well all over. Remove from the pan and wrap tightly in foil to create a rounded sausage shape, twisting the ends so you have a cylinder. Can be done the day before and kept in the fridge.
- Heat the butter in an ovenproof frying pan and sizzle the shallot, cut-side down, for 5 mins until slightly charred. Baste with the butter in the pan and add the pork roll, still in its foil. Put in the oven for 20 mins, turning the pork once. Remove the pork and shallot, and keep warm.
- Sizzle the flour in the pan over a medium heat, then add the wine and reduce until there's almost no liquid left. Add the stock, simmer to make a sauce, then add the rest of the garam masala and keep warm
- Cut the fillet, still in its foil, into two and slice each piece on the angle lengthways so you have four pointed pieces. Remove the foil and pour any juices into the sauce. Finely slice each apple cheek, then fan out one on each plate, sitting a piece of pork on top. Put a slice of domino potatoes (see recipe in 'Goes well with', right) beside it, with a shallot and another piece of pork on top. Drizzle with sauce and serve.
