PORK TENDERLOIN CUBANO WITH MANGO MOJO
I found this recipe on Campbell's Kitchen. Pork tenderloin is split and filled with a stuffing of chorizo sausage, salsa and Pepperidge Farm® Garlic Herb Croutons, grilled to perfection and served with a mango-orange-cilantro sauce.

- Put the pork between 2 sheets of plastic wrap. Working from the center, pound the pork flat into a 14 x 6-inch rectangle. Remove the plastic wrap. Stir 1/2 cup of the salsa, the chorizo and croutons in a medium bowl. Spread the chorizo mixture lengthwise down the center of the pork. Fold the sides over the filling to form a 14-inch long roll. Tie the pork crosswise at 2-inch intervals with kitchen twine.
- Add the remaining salsa, orange juice, cilantro, brown sugar and mango to an electric blender or food processor container. Cover and blend the mixture until it's smooth and pour into a 10-inch skillet. Heat over medium-high heat to a boil. Reduce the heat to medium-low. Cook and stir for 20 minutes or until the sauce thickens.
- Lightly oil the grill rack and heat the grill to medium. Grill the pork for 20 to 30 minutes or until cooked through but slightly pink, turning the pork over halfway through cooking.
- Remove the pork from the grill and let stand 10 minutes. Thinly slice the pork and serve with the mango sauce.

- For the mojo, you will need a large bowl. In a large bowl, pour the sour orange juice or lime juice, oregano, salt, pepper, garlic and sliced onion into the bowl and stir.
- Heat the olive oil over medium-high for 2 minutes, then when hot, pour olive oil into bowl. Be careful not to get burned, since some of it might splatter out.
- Mix the mojo ingredients, then let sit for 30 minutes.

This is one of those recipes that requires simple preparation the night before and then goes on the grill or in the oven for a quick but delicious meal. - Place the pork in a non-reactive container or plastic bag.
- In a bowl, whisk together the salt, pepper, garlic, onion, oregano, molasses, orange juice, lime juice, and rum.
- Pour the marinade over the pork, coating all surfaces.
- Cover and refrigerate for 2 hours and as much as overnight.
- Return to room temperature before cooking.
- Grill method: Grill the tenderloins over hot coals, 4 inches from the heat source, about 5 minutes per side for medium-rare, basting with the reserved marinade.
- Oven method: Roast the pork in a 400F oven for 20-25 minutes.
- Let the meat rest for 5 minutes; then slice into 3/4 inch thick rounds and serve.

- Prepare the Mojo sauce by placing all sauce ingredients in a blender. Puree until sauce is smooth and creamy. Set aside.
- Preheat oven to 400F with rack on lower middle. In an oven proof heavy pot (Dutch oven works well) combine pork, broth, two-thirds of the garlic, bay leaves, salt, and pepper. cover tightly and bake 1.5 hours or until pork is very tender. Use slotted spoon to transfer pork to a bowl. Boil the liquid i pot until it’s reduced to 1.5 cups, about 30 min. Return pork to pot, add 1/4 cup of the mojo sauce, and simmer 5 minutes.
- Meanwhile, in a heavy large skillet over medium high heat, add oil, onion, and rest of garlic. Saute until onions are tender, 12 min. Season with a dash of salt and pepper to taste.
- Transfer pork to serving individual plates. Spoon pan juices over pork. Top with onion mixture, and drizzle with remaining Mojo sauce.

- PORK TENDERLOIN: Combine 1/4 cup olive oil, orange juice, lime juice, garlic, spices and salt in a zipper-top bag. Add the pork, seal and massage to thoroughly coat the pork. Refrigerate at least 8 hours and up to 24 hours.
- Preheat oven to 350 degrees. Heat 2 tablespoons olive oil in a skillet or saute pan over medium-high heat. Remove pork from marinade. Place in the pan and sear well on all sides. Transfer pork to a baking sheet and place in the oven to finish cooking to an internal temperature of at least 145 degrees in the center. Tent to keep warm and rest 5 minutes.
- BLACK BEANS: While the pork is roasting, prepare the black beans. Wipe out the pan used to sear the pork.
- Heat olive oil over medium-high heat. Add the onion, reduce heat to medium and cook 5 to 6 minutes, stirring often until onion is softened. Add the poblano or bell pepper and continue to cook 3 to 4 minutes. Add the tomatoes and cook 3 to 4 minutes, then add the garlic, cumin and oregano and cook 15 seconds or until fragrant.
