Beef Tenderloin with Costa Rican Coffee Balsamic Fig Glaze image

Steps:

  • In heavy-bottomed sauce pot, over low heat, add the vinegar and reduce it by half, stirring constantly. Add the sugar, coffee and figs and further reduce by 1/3 volume, continue to stir throughout this step. Remove from the heat when you have 3/4 cup liquid remaining. Pour the glaze through a strainer into a small bowl, discarding the solids.
  • Preheat the grill to 300 degrees F.
  • Season the beef tenderloin with salt and pepper, to taste, and put on the preheated grill. Cook on each side until desired temperature is reached, about 7 to 8 minutes for medium-rare. Remove from the grill and evenly brush the tenderloin with the balsamic glaze. Return the beef to the grill for 5 minutes, allowing the glaze to coat the meat. Remove the tenderloin from the grill to a cutting board and let rest for 5 minutes. Slice, arrange on a serving platter and serve.

4 cups dark Modena balsamic vinegar
1 tablespoon granulated sugar
1 cup brewed strong Costa Rican dark roast coffee
1/4 cup fresh figs
2 1/2 to 3 pounds beef tenderloin, Chateaubriand cut
Salt and freshly ground black pepper

Steps:

  • Rub meat with the mustard powder and thyme to taste. Place in a nonreactive dish and add 1/2 cup sherry, 1/2 cup soy sauce, the garlic and the ginger. Coat the loin well, cover and refrigerate overnight.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Bake in the preheated oven for 25 minutes per pound, or until the internal temperature reaches 145 degrees F (63 degrees C). Baste the pork occasionally while cooking.
  • Meanwhile, heat the apple jelly in a small saucepan over medium heat. Add 2 tablespoons sherry and 1 tablespoon soy sauce, stir well, reduce heat to low and let simmer. Pour over the tenderloin when it's done.

Steps:

  • Heat oil in a big skillet over medium-high heat.
  • Add in onion, stir/saute for 5 minutes.
  • Add in ginger, garlic, and serrano pepper; stir/saute 2 minutes.
  • Stir in molasses.
  • Remove pan from heat; carefully stir in rum.
  • Cook mixture 2 minutes.
  • Stir in brewed coffee, ground coffee, cinnamon, and cocoa.
  • Bring to a boil; cook until reduced to 1 1/2 cups (about 20 minutes).
  • Remove pan from heat; let cool.
  • Transfer mixture to the container of a blender; process until smooth.
  • Stir in butter and salt.
  • Trim any visible fat from pork; cut pork, lengthwise into 8 (1/2-inch wide) strips.
  • Thread pork strips onto 8 (10-inch) skewers.
  • Prepare grill; place kebabs on grill rack that has been coated with nonstick cooking spray; grill 4 minutes on each side or until desired doneness, turning and basting often with coffee mixture.

  • Place tenderloins in a shallow glass dish. In a small bowl, whisk together soy sauce, hoisin sauce, sherry, black bean sauce, ginger, sugar, garlic, sesame oil, and five-spice powder. Pour marinade over pork, and turn to coat. Cover, and refrigerate for at least 2 hours or up to 24 hours.
  • Preheat oven to 375 degrees F (190 degrees C). Remove tenderloins from refrigerator while the oven preheats.

  • Combine the espresso powder, brown sugar, sweet paprika, smoked paprika, salt, and pepper in a small bowl. Rub the mixture over the pork until the surface is entirely coated. Drizzle pork with 1 tablespoon of the olive oil. Set aside at room temperature for 10 minutes.
