- Cut pork into 12 slices; sprinkle with steak seasoning. In a large skillet, heat butter over medium heat. Add pork; cook, covered, until pork is tender, 3-5 minutes per side. Remove from pan; keep warm., Add cream to skillet; bring to a boil, stirring to loosen browned bits from pan. Cook until cream is slightly thickened, 2-3 minutes. Stir in cheese until melted. Serve with pork. Sprinkle with parsley.

Steps:
- Melt the butter over a medium heat in a large, shallow saucepan, frying pan or flameproof casserole until foaming. Season the pork slices, then fry for 2 mins on each side until browned. Use a slotted spoon to lift the pork onto a plate, then cook the apple wedges in the same pan for 3-4 mins until starting to caramelise. Lift onto the plate and set aside. Reduce the heat, scatter the leeks and thyme into the pan and cook for 15-20 mins until softened.
- Splash in the vinegar and simmer for 1 min, then pour the stock over the leeks, season and simmer for 10 mins more. Pour in the cream, then add the mustard and return the pork and apples to the pan. Season to taste and simmer for 5 mins more until the pork is cooked through but still tender and the apples are starting to soften. Serve the pork spooned over mash, if you like.

- Preheat broiler. Sprinkle pork chops on both sides with pepper; place on a broiler pan coated with cooking spray. Broil 4-5 in. from heat 4-5 minutes on each side or until a thermometer reads 145°. Let stand 5 minutes before serving., Meanwhile, in a small saucepan, heat butter over medium-high heat. Add green onion and garlic; cook and stir until tender. In French, Cotes de Porc aux Pommes a la Moutarde. This is adapted from a Richard Olney recipe and is really very simple and quite delicious.

Steps:
- Preheat oven to 400°F.
- Spread the apples in a lightly buttered gratin dish, large enough to hold the pork chops in a single layer.
- Place gratin dish in the oven and bake apples for 15 minutes.
- While apples are baking, saute the salted pork chops over medium heat until nicely colored on each side-7 to 8 minutes per side.
- Remove gratin dish from the oven and arrange the chops on top of the apples.
- Deglaze the saute pan with the white wine and reduce by half.
- Drizzle reduction over the chops.
- Mix cream (or sour cream/yogurt and milk) and mustard, adding mustard little by little until you are happy with the taste.
- Pour evenly over the chops and apples and grate pepper overall.
- Return to oven and bake an additional 15 minutes.
