PORTUGUESE BREAD PUDDING

This is a recipe by Jerry Carreiro, chef-owner of the Tip for Tops'n restaurant in Provincetown, Mass., he makes big batches of this Portuguese bread pudding from his grandmother's recipe every week. Portuguese Bread Pudding image

Steps:

  • 1. In a large bowl, whisk together the eggs and sugar. Whisk in the milk, vanilla, cinnamon, and nutmeg. Stir in the raisins. Generously butter the bread with the softened butter. Submerge the bread in the egg mixture and set aside for a least 20 minutes. Use your hands or a large spoon to break the soaked bread into smaller chunks.
  • 2. Preheat the oven to 350 degrees. Generously butter a 9x11 inch glass baking dish.
  • 3. Transfer the soaked bread to the baking dish and smooth the top. Drizzle with the melted butter.
  • 4. Bake in the preheated oven until the top of the pudding puffs and browns and a knife inserted in the center comes out clean. 50 minutes to 1 hour. Serve warm or at room temperature topped with the vanilla ice cream. 6-8 servings

4 eggs
1 c sugar
4 c whole milk
1 1/2 tsp vanilla extract
1/2 tsp cinnamon
1/4 tsp nutmeg
1/2 c raisins
3 Tbsp butter, softened
8 oz sliced portuguese or italian bread
3 Tbsp butter, melted
vanilla ice cream

  • Pao De Lo (Portuguese Sponge Cake) Pao de lo is almost like an angel cake in that it is lightened up using whipped eggs. Needing just six ingredients – eggs, flour, sugar, salt, baking powder, and lemon zest – this no-fuss cake is great for any occasion.
  • Chocolate Salami. Don’t worry; there’s no meat in this. It gets the name from how it looks – like a slice of salami! These no-bake cookies are so easy to throw together and are super simple to modify.
  • Azorean Biscoitos (Portuguese Biscuits Recipe) These lightly zested cookies are a staple in most Portuguese homes. They’re light and tender and almost like a shortbread.
  • Portuguese Carrot Cake Recipe. I’ve heard some people complain about carrot cake being too busy with all the nuts and carrots and raisins. I don’t get it, but I can see how some people may prefer something more straightforward.
  • Bolo Nega Maluca (Brazilian Chocolate Cake) If you make this cake using the ingredients listed, you’ll notice it’s much sweeter than your average chocolate cake.
  • Arroz Doce (Portuguese Rice Pudding) I’ve eaten rice pudding for breakfast, lunch, and dinner. It can be warm, cold, with coconut milk, cinnamon, fruit, or even chocolate.
  • Honey Cake. One big thing I noticed when I was traveling is that many European countries make and use honey in a lot of their baking. I’m talking about natural, homegrown honey – not the processed stuff you find in the store.
  • Bolo Rei (Portuguese Kings Cake) In many European countries, the biggest holiday celebration is King’s Day, January 6th. Though they will celebrate Christmas Eve, you’ll find all kinds of festivals popping up in the first week of January.

  • Portuguese Custard Tarts. Let’s start with perhaps the most famous pastry in Portugal – the ‘pastéis de nata’ also known as ‘pastéis de Belém’ (but with slightly different recipes).
  • Queijadas de Sintra. A traditional sweet found in the majestic town of Sintra, Queijada de Sintra’s are a cheese, egg and cinnamon tart with a crunchy outer layer.
  • Bola de Berlim. If you are a doughnut fan, wait until you try the Bola de Berlim. These Portuguese doughnuts are made with sweet dough, filled with lots of egg yolk cream and dusted off with icing sugar.
  • Bolo Rei. Traditionally eaten at Christmas time, the Bolo Rei or ‘King Cake’ is a staple dessert in any Portuguese home during the holidays. The cake is made from sweet bread, nuts, and crystallized fruit.
  • Caramel Flan. A crème caramel or ‘flan’ is as you guessed it, a custard dessert, with a layer of caramel topping. You could say this is the Portuguese version of a crème Brulée but without the crusty top layer.
  • Pão de Deus. With a name that translates to “God’s bread,’ it is easy to see why this is one of my favourite desserts in Portugal. The Pão de Deus is a sweet golden bread filled with coconut, a sure recipe sent from the heavens.
  • Arroz Doce. Now a popular dessert around the world, the Arroz Doce is a rice pudding made with rice, sugar, egg, milk and salt. It is best served with a crusty exterior and custard-like soft interior.
  • Tarte de Alfarroba. A carob tart traditional of the Algarve region, it is made using locally grown carobs (figs) and almonds. It is not actually chocolate, but its flavour is rich and tastes very similar.
  • Molotov. Like many Portuguese desserts, the Molotov is made using egg whites. It is a light and airy dessert that just about melts in your mouth. If you want to try and make it at home, here’s the recipe.
  • Bolo de Bolacha. A traditional biscuit cake that does not require any baking! It is prepared using Maria biscuits, a classic Portuguese biscuit that every Portuguese family stock in their pantry.
