- Heat a 10-inch heavy skillet over medium high heat.
- Slice potatoes and onions very thin. Salt potatoes and onions. Add oil and butter to the pan. When the butter foams, add potatoes and onions to the skillet.
- Place a dinner plate on top of potatoes and weight it with any heavy object: a sack of flour, heavy canned goods, etc. Let the potatoes and onions crust, 2 to 3 minutes, then turn, replace weights, and let them crust again. Keep turning the potatoes and onions over for about 20 minutes, until they are evenly golden and crusted.
EASY FRIED POTATOES & ONIONS
This is so good. My grandmother was from Ireland and she used to make this dish all the time. When I make it, it always reminds me of her. I hope you enjoy it :)

- Heat oil and butter in a skillet. Add the onions and cook until soft and lightly browned. Remove the onions from the pan and reserve.
- Slice the potatoes into 1/4 inch slices. Add them to the hot pan and brown on both sides.
- Return the onion to the pan, toss and season. Serve warm.

This is a good and quick supper. I got this from the Chicago Tribune but I added some garlic and pepper flakes. Have some refried beans and flour tortillas on the side and you have a yummy and quick supper!

- Heat olive oil in a large, heavy skillet over medium high heat. Add potatoes and onions; cook, turning with spatula, 10 minutes. Reduce heat to medium; cover, cook until tender, stirring occasionall, about 10 minutes.
- Add salt and pepper. Cook, uncovered, turning mixture with a spatula, until onions are golden, potatoes have begun to break apart and are slightly crunchy, 9 minutes. Sir in eggs; cook until firm, about 1 minute.

QUICK FRIED BREAKFAST POTATOES WITH ONIONS
I make these usually on a Sunday morning. I love the smell of frying onions. I do not buy the ready hash browns anymore. I do make extra to serve for another breakfast during the week.

Steps:
- 1. Wash potatoes and prick with a knife.
- 2. Microwave the potatoes for approximately 8 minutes.
- This can be done the night before. (Do not peel the potatoes).
- 3. Heat oil and butter together in skillet.
- 4. Slice the potatoes and add to the skillet and cook over medium high heat add onions, season salt, parsley after 5 minutes and continue cooking until potatoes are crispy. This takes approximately 10 minutes.
- 5 You may need to add more or less season salt depending on your potato size.

- Peel and slice the potatoes into about 5mm thick circles. Then rinse them under a cold water tap until the water runs clear. This is to reduce the starch in the potatoes.
- Place the potatoes in a saucepan with salted cold water and over medium heat bring the pan to the boil. When the water starts to boil, remove the heat and let the potatoes sit in the hot water for 5-10 minutes.
- Then pour the potatoes into a colander and drain them. Make sure all water is removed - pat them dry with kitchen paper if necessary.
- Heat the oil in a flat frying pan (I use beef dripping to give the potatoes a unique taste). Then fry the potatoes, in batches if need be. Meanwhile, slice the onion.
