Steps:

  • Place potatoes in a small saucepan and cover with the water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until tender., Meanwhile, in a large skillet, cook bacon until crisp; remove to paper towels to drain and set aside., In the same skillet, saute onion and celery in drippings until tender; drain. Add to undrained potatoes. Stir in the soup, milk, sour cream, salt and pepper. Cook over low heat for 10 minutes or until heated through (do not boil)., Crumble bacon; set aside 1/4 cup. Add remaining bacon to soup along with parsley. Sprinkle with reserved bacon.

Steps:

  • Melt butter in saucepan over medium heat; cook and stir onion until lightly browned, about 10 minutes. Add potatoes, water, dill weed, salt, and pepper to onion; bring to a boil. Reduce heat and simmer until potatoes are tender and water is almost all evaporated, at least 30 minutes.
  • Stir milk and bacon bits into potato mixture; bring to a boil. Remove from heat and stir parsley into soup.

DIY Instant Potato-Bacon and Chive Soup image

Steps:

  • Add the instant mashed potatoes, milk powder, bouillon granules, bacon crumbles, chives, garlic powder, onion powder and 1/8 teaspoon black pepper a heatproof airtight pint container or glass jar with a lid. Seal and store in a cool, dark place until ready to use. (Up to 1 month.)
  • To serve: Add 1 3/4 cups boiling water, seal the container, wrap in a clean, dry kitchen towel (in case of a spill or leak) and shake vigorously for 20 seconds. Let sit for 1 minute to let the soup hydrate. Give one final shake before eating.

  • Cook 4 bacon slices in a skillet until crisp. Remove, leaving the drippings in the pan. Melt 2 tablespoons butter with the drippings over medium heat. Add 1 chopped leek and 1 chopped peeled russet potato. Cook until the leek is softened, about 5 minutes. Add 2 cups chicken broth and 1 cup heavy cream. Simmer until the potatoes are tender, about 15 minutes, then puree in a blender in batches until smooth. Serve in small glasses; chop the bacon and sprinkle on top.

Steps:

  • Cook bacon until crisp in 3-quart saucepan, remove and drain well on paper towels. Discard bacon grease and wipe pan thoroughly with paper towel.
  • Meanwhile, prepare vegetables. Add olive oil to saucepan and add onion, carrot, and celery as they are cut up. Saute until onion is soft but not brown, about 3-4 minutes.
  • Stir in chicken broth, potatoes, and pepper; bring to a boil, reduce heat, and simmer, covered, until potatoes are tender, about 10-15 minutes.
  • Stir in cheese, heating just until melted--do not boil. Chop bacon and add to soup. Adjust seasoning to taste by adding salt, if desired. Serve at once.

Steps:

  • Fry bacon until crisp, and chop. Drain and use paper towel to soak up excess fat.
  • In a large pot, sautee onion and garlic with 2 tbsp bacon drippings.
  • Add potatoes, water, bouillon cubes to pot.
  • Heat to boiling, then cover and simmer until potatoes are cooked, then add bacon.
  • Mix flour with a small amount of evaporated milk, making a paste.
  • Gradually stir in remaining milk.
  • Add to potato mixture.
  • Cook over medium heat until mixture comes to a boil and thickens.
  • Stir often to ensure the soup doesn't burn on the bottom of the pot.

Steps:

  • Cook bacon til crispy, drain on paper towels, and crumble.
  • Saute onion and celery in bacon fat til bacon is translucent.
  • Dice potatoes and cover with water or chicken stock. Add sauted onions, celery, (make sure you add some of that bacon fat too)celery tops, seasonings.
  • Simmer potatoes til fork tender, not mushy.
  • Mix slurry ingredients together, add to simmering potatoes, a little at a time. Use a spatula and not a spoon for this.
  • Simmer until thickened, add milk, cream, crumbled bacon.
  • If you want to make this a cheddar cheese soup, now is the time to add 3 cups of shredded extra sharp sheddar.
  • Adjust seasonings at this time, ladle into soup crocks and garnish with parsley and some bacon.

  • Cook bacon in a large stockpot over medium heat until crispy.
  • Add onion and cook 4-5 minutes, until tender.
  • Add salt and pepper, thyme sprig, rosemary sprigs, and bay leaf.

  • Add stock or water and bring to a boil.
