POTATO GOODIE
This came from my local paper. Prep time does not include thaw time if using frozen hash browns. Haven't tried it but it sounds yummy, (and oh so easy!!!), so I will be making it this weekend!

Steps:
- Mix all ingredients together in a large mixing bowl. Salt and pepper to taste.
- Place mixture in 9x13 baking dish and bake at 375 degrees for 1 hour.

GOODY GIRL CHAMPIONSHIP POTATOES
Steps:
- Fill a 6-quart pot 2/3 full of water; add the crab boil and mix until blended. Cut the potatoes in half and slice into 3/8-inch thick pieces. (This can be done ahead of time; cover the potatoes with ice water until ready to cook.) Add the potatoes to the pot. Bring water to a boil and cook the potatoes until fork-tender.
- While the potatoes are cooking: in a medium saute pan on medium heat, cook bacon until crispy; remove and drain on a paper towel. Add red onion to bacon grease; cook until caramelized. Just before onions are done, add garlic and cook until lightly brown.
- In a bowl, place butter, 1/2 the cheese, 1/2 the bacon bits, 1/2 the green onions, the cooked red onions and garlic, cayenne, paprika, salt, pepper, and sour cream; mix together thoroughly.
- Strain potatoes and add to bowl; let stand for a few minutes or until cheese starts to melt. Fold ingredients together, trying not to break up the potatoes excessively. Top with remaining cheese, bacon, and green onions.
- Check seasonings and adjust to taste.
JANE'S POTATO GOODIE
This is my mom's recipe. She alwasy made this to go with ribs and I can't eat ribs at home without this. Great dish for pot lucks, and family reunions.

Its time to release my potatoes to the world!!! Watch your guests try to guess what's in this delicious and simple recipe. It's the perfect side dish to any meal or BBQ, and a great way to dress up those darn potatoes! It's got me out of many a jam with entertaining. You cant go wrong. Since trying these, I have gone completely potato crazy with mad potato disease!!! Yum -- do it, mate! (Note: Only use real egg mayo - not the other kind.)

Steps:
- In a small bowl, mix mayonnaise, garlic, oregano, salt , and pepper. Set aside.
- Bring a large pot of salted water to a boil. Add potatoes, and cook until almost done, about 10 minutes. Don't overcook otherwise the potatoes will break apart. Drain, and cool.
- Preheat oven broiler. Line a baking tray with aluminum foil, and lightly grease the aluminum foil.
- Arrange potatoes in the prepared baking tray. Spoon the mayonnaise mixture over the potatoes. Broil in the preheated oven until potatoes are tender and mayonnaise mixture is lightly browned, about 10 minutes.

SWEET POTATO CASSEROLE CRUNCH GOODIE
This is a deliciously sweet and tasty dish. My grandmother used to make it and we love it. It's so good you'll want it for your vegetable and your dessert. You can microwave or boil your potatoes for a faster recipe, but I prefer baking the very dark yam.
