MIDDLE EASTERN SPICED POTATO CAKES

Middle Eastern Spiced Potato Cakes image

Steps:

  • Preheat the oven to 375 degrees F.
  • Add the potatoes to a pot and cover with 6 cups water. Season well with salt. Bring to a rolling boil over high heat and cook the potatoes until easily pierced with the tip of a sharp knife, about 9 minutes. Drain and cool, about 10 minutes. Peel and set aside.
  • Combine the granulated garlic, 4 teaspoons salt, the black pepper, cumin, cinnamon, fenugreek, turmeric and nutmeg in a small mixing bowl. Set aside.
  • Once cooled, crush the potatoes gently; the texture should be course and crumbly. Place into a bowl.
  • Thoroughly combine the egg, scallions, 1/4 cup of the flour and the spice mix in a bowl. Add to the potatoes and stir to combine. Season the remaining flour with 1 teaspoon salt and some pepper. Form the potatoes into 2 1/2-ounce patties. Sprinkle the tops and bottoms with the seasoned flour.
  • Set a large nonstick pan over medium-high heat and add 3 tablespoons oil. Once hot, fry the patties, in batches if necessary, on the first side until golden brown, about 3 minutes. Flip and place into the oven until crispy on both sides and hot through, another 3 minutes. Remove from the oven and cool slightly.
  • To serve, arrange the patties on a serving dish. Garnish with cilantro and serve with lemon wedges.

1 1/2 pounds russet potatoes (about 2 large)
Kosher salt
2 1/2 tablespoons granulated garlic
3 teaspoons freshly cracked black pepper
1 1/2 teaspoons ground cumin
1/2 teaspoon ground cinnamon
1/4 teaspoon fenugreek
1/8 teaspoon turmeric
5 grinds nutmeg, freshly grated on a zester
1 large egg
3 scallions, sliced
1/3 cup unbleached all-purpose flour
Canola oil, for frying
3 tablespoons chopped fresh cilantro
1 lemon, cut into wedges

OLD-FASHIONED PORK CAKE

This recipe is one that my Grandma Lewis would make when she had the ingredients on hand -- because the family lived deep in the mountains of West Virginia a quick trip to the store was not feasible especially during the winters months. My grandma was a terrific cook and never measured ingredients (old school of little bit of this, little bit of that) but it didn't matter because whatever she cooked always tasted good and filled you up! This recipe is one of my dad's favorites and I hope you like it, too!

Old-Fashioned Pork Cake image

Steps:

  • Grease and flour 2 bundt pans. Preheat oven to 325 degrees.
  • Put pork and raisins in a large mixing bowl (6qt.+) and pour hot coffee over them; Set aside allowing some time to cool.
  • Sift together all measured dry ingredients; Mix in walnuts.
  • Stir pork mixture carefully in case the coffee is still hot. Slowly begin to add sifted dry ingredients with walnuts and combine together thoroughly.
  • Mix in applesauce and citron.
  • Pour into greased and floured bundt pans. Bake for 1-1/2 to two hours or until done.

Steps:

  • 1. In a small saucepan, cook the potato in salted water to cover until very tender, about 8 minutes. Drain and mash potato with the butter while still hot. Cool until lukewarm. 2. In a mixing bowl, using clean hands, mix the masa harina, salt, and water together to make a soft dough. If too dry, add additional water 1 to 2 teaspoons at a time until the dough is moist and soft, but not sticky. Add the mashed potato and work it into the masa with your hands. Divide the dough into 4 equal pieces and form into balls. 3. Put 1 ball between 2 pieces of plastic wrap and gently press and pat lightly with your hands to make a 4-inch round cake about 1/3-inch thick. 4. Preheat the oven to 200°. In an 8-inch nonstick skillet, heat about 1 tablespoon of oil over medium heat. Remove the plastic and fry the cake until golden brown and crisp on both sides, about 5 minutes per side. Steps:

  • In a large bowl, mix potatoes, baking mix, stuffing and eggs until blended. Refrigerate, covered, 30 minutes., Preheat oven to 400°. In a shallow bowl, mix onions and bread crumbs. Shape 1/4 cupfuls of the potato mixture into 3/4-in.-thick patties. Dip patties in crumb mixture, patting to help coating adhere., Transfer to two greased 15x10x1-in. baking pans.
