SAVORY POTATO PANCAKES
Steps:
- 1.Prepare the sour cream topping by folding the onion powder, garlic powder, and Italian seasoning into the sour cream. Cover and refrigerate until use.
- 2.Dice the onion and chop the parsley.
- 3.Combine with the bread crumbs, eggs, salt, and pepper.
- 4.Peel the potatoes and shred.*
- 5.Squeeze out any excess moisture from the shredded potatoes.
- 6.Add potato shreds to the bread crumb mixture.
- 7.Working in batches of three or four, scoop out ¼ cup of the mixture and place it in a large, lightly oiled pan over medium heat.
- 8.Flatten to ¼-inch thick circle.
- 9.Fry for three to five minutes on each side or until golden brown.
- 10.As you finish each batch, transfer the pancakes to a cookie sheet lined with paper towels and place in oven turned to warm.
- 11.Serve each pancake with a small dollop of seasoned sour cream mixture.
- *Take care not to prepare the shredded potatoes first since they will turn brown before you can finish the rest of your mixture.

- In a strainer or colander, drain zucchini, squeezing to remove excess liquid. Pat dry. In a large bowl, whisk eggs, flour, salt, pepper and basil until blended. Stir in onion, potato, carrot, corn, cheese and zucchini., In an electric skillet, heat 1/4 in. of oil to 375°. Working in batches, drop vegetable mixture by 1/3 cupfuls into oil; press to flatten slightly. Fry 2-3 minutes on each side or until golden brown. Drain on paper towels. If desired, sprinkle with pepper and serve with sour cream.

- In 2-quart saucepan, stir together apples, water, ginger and brown sugar. Cover; heat to boiling. Reduce heat; cover and simmer 10 to 15 minutes, stirring occasionally, until apples are tender. Drain off any excess liquid. Stir in cinnamon.
- Heat griddle or skillet over medium-high heat or electric griddle to 375°F; grease if necessary. (Surface is ready when a few drops of water sprinkled on it dance and disappear.)
- In large bowl, stir Bisquick mix, milk, salt and eggs until blended. Stir in potatoes. Pour batter by slightly less than 1/4 cupfuls onto hot griddle, spreading each slightly to make 4-inch pancake.
- Cook until edges are dry. Turn; cook until golden brown. Serve with warm or cold applesauce.

- In a large saucepan over medium heat, heat the water and stir in the potatoes, carrots and celery. Cook 15 minutes, or until tender but firm. Remove from heat. Drain and set aside, reserving liquid.
- Place the onions and butter in the large saucepan. Over medium heat, slowly cook and stir 10 minutes, or until the onions are tender. Mix in the flour, salt, pepper, paprika and heavy cream. Mix in the potato mixture. Continue cooking and stirring, adding the reserved liquid a tablespoon at a time, until the mixture has reached a desired consistency.

VEGETABLE STEW WITH POTATO AND CHEESE PANCAKES

- In a medium pot over moderate heat saute garlic and mushrooms in extra-virgin olive oil for 2 or 3 minutes. Add zucchini and onion to the pot and season vegetables with salt and pepper. Saute another 5 minutes. Add beans, cumin, tomato and chopped rosemary. Bring stew to a bubble, reduce heat to low and simmer 10 minutes.
- Heat a nonstick skillet over medium high heat. Add a thin layer of olive oil or vegetable oil to the pan, just enough to coat the bottom. Combine potatoes with onions and flour. Mix in shredded cheese. Spoon piles of potato and cheese mixture into the pan, making 3-inch rounds, 1-inch apart. Cook cakes until golden and crispy, about 4 minutes on each side. Remove cooked cakes and repeat process.
- Arrange cakes, 3 per person, on dinner plates and top with ladles of mushroom and zucchini stew.
CHUNKY VEGETABLE STEW

- 1. In a 2 1/2 -quart saucepan over medium heat, saute onion and garlic in oil until onion is almost tender. Drain off fat.2. Add tomatoes with juice, tomato sauce, tomato juice, zucchini and herb seasoning. Bring to a boil reduce heat to low, cover and simmer for 15 minutes or until vegetables are almost tender.3. Stir in frankfurters and mushrooms. Cover and cook for 10 minutes or until eggplant is tender and frankfurters are plumped. If making ahead, uncover and cool completely, then cover and refrigerate up to 24 hours.4. To reheat, cook over medium heat for 15 to 20 minutes or until heated through, stirring occasionally.
