BLUEBERRY SIMPLE SYRUP

This flavored simple syrup is very versatile and goes with so many things. I especially like to put it on top of French toast, in pancake or waffle batter, and it's very yummy in cornbread or biscuit batter. This can be made in advanced and stored and refrigerated in a glass jar.

Blueberry Simple Syrup image

Steps:

  • Mix blueberries, water, and sugar together using a whisk in a small saucepan over low heat until sugar is dissolved, about 5 minutes. Increase heat to medium and bring a gentle boil, stirring often, until syrup is thickened, about 15 minutes.
  • Whisk lemon juice into syrup; serve immediately or cool.

Potato Waffles With Blueberry Syrup image

Steps:

  • In medium saucepan, combine sugar, cornstarch and cinnamon; stir in water and lemon juice until smooth.
  • Over medium heat, bring to a boil, stirring constantly.
  • Stir in blueberries; reduce heat.
  • Simmer about 3 minutes or until thickened, stirring occasionally.
  • Remove from heat; set aside.
  • Heat waffle iron.
  • Lightly spoon flour into measuring cup; level off.
  • In large bowl, combine potato flakes, flour, baking powder and salt. Add milk, oil and eggs; stir until blended (batter will be lumpy).
  • Bake in hot waffle iron until steam stops and waffle is golden brown.
  • Serve with warm blueberry syrup.
