QUICK AND EASY PEPPERMINT FUDGE

Ree Drummond's super-easy fudge recipe uses only three ingredients. Sprinkle the chocolate layer with peppermint candies before cutting into bite-sized squares.

Quick and Easy Peppermint Fudge image

Steps:

  • Line an 8-by-8-inch square baking pan with aluminum foil. Spray the foil with cooking spray.
  • In a medium saucepan over low heat, combine the chocolate chips and sweetened condensed milk and stir until melted and smooth. Pour into the prepared baking pan and spread to even out the surface. Sprinkle on the crushed candies. Refrigerate for 2 hours.
  • Lift the foil out of the pan and peel off the fudge. Cut into small squares.

Cooking spray, for spraying foil
3 cups semisweet chocolate chips
1 can sweetened condensed milk
Red peppermint candies, crushed, for topping

  • Line the bottom and sides of an 8x4-in. loaf pan with foil. Grease foil with 1-1/2 teaspoons butter; set aside. , In a small bowl, beat cream cheese until creamy. Gradually beat in the confectioners' sugar, cocoa, milk and vanilla until smooth. Stir in nuts. Spread into prepared pan. Chill until firm, about 1 hour. , For peppermint layer, beat cream cheese in a small bowl until creamy. Gradually beat in the confectioners' sugar, milk and extract until smooth. Stir in peppermint candy. Spread evenly over chocolate layer. Chill until firm, about 1 hour. , Using foil, lift fudge from pan. Gently peel off foil. Cut into squares.

Pretty Pink Peppermint Fudge image

Steps:

  • 1. Put the bag of baking chips in a glass bowl -don't pile them all to the middle, but kind of spread them out.
  • 2. Microwave on high for 90 seconds. Take out and stir well. Do not be tempted to melt longer -when you stir them they will melt (And you will be microwaving them again after adding the can of frosting._
  • 3. Then dump/spoon in one whole can of frosting on top of the melted chips.
  • 4. Microwave on high 90 seconds. Take out and stir well. Again, don't be tempted to over-microwave -it may scorch or lump.
  • 5. Pour/spoon into a 8"x8" or 9"x9" square Pan. I line the pan with aluminum foil that has been sprayed with Pam. It makes it easier to lift out the cup pieces. You can just spray with Pam or other non-stick cooking spray.
  • 6. Refrigerate until chilled and set. Then cut into small squares -it is a rich fudge. Makes 24 to 30 pieces (depending on the size of the squares).
  • 7. Try this yummy fudge -Remember it's easy and just takes 2 ingredients.
  • 8. NOTE: This is the first year that I have seen the Andes Peppermint Crunch Baking Chips. I use to use the White Chocolate Baking Chips and added crushed candy canes. It won't be pink with just the white chips but you can add food coloring if desired (not necessary with the Andes Peppermint ones -as they turn the fudge pink when melted).

Candy Cane Fudge image

Steps:

  • Line an 8 inch square baking pan with aluminum foil, and grease the foil.
  • Combine the vanilla chips and sweetened condensed milk in a saucepan over medium heat. Stir frequently until almost melted, remove from heat and continue to stir until smooth. When chips are completely melted, stir in the peppermint extract, food coloring, and candy canes.
  • Spread evenly in the bottom of the prepared pan. Chill for 2 hours, then cut into squares.

  • In a microwave safe bowl, add the chocolate chips and 1 can of the sweetened condensed milk. Heat on high for 1 minute, stir. Heat for 30 second increments, and stir until the chocolate chips have completely melted. Stir in the peppermint extract. Mixture will begin to thicken as it cools. Evenly press into the bottom of the prepared pan.
  • To make the second pink layer, add the white chocolate chips and the second can of sweetened condensed milk. In the microwave, heat for one minute on high. Stir. Heat for 30 second increments, and stir until the chocolate chips melt completely. (Be careful not to overheat). Add the peppermint extract and a few drops of red food coloring, and stir until completely pink. Press on to the top of the chocolate layer.
  • Top the fudge with the mini chocolate chips and peppermint crunch. Refridgerate for at least 2 hours before cutting. To make cutting easier, lift the fudge out of the pan by the sides of the foil. Cut into 1" squares.

  • Line an 8x8-inch cake pan or casserole dish with heavy-duty aluminum foil or waxed paper allowing the foil to extend over the edge 2 to 3 inches (you'll use this as handles to pull the fudge out of the pan). Spray the foil or paper with non-stick spray.
  • In an electric mixer beat cream cheese until soft. Place 1/4 cup of the Andes Peppermint Crunch in a zip-top bag and crush slightly. Add the 1/4 cup crushed candies and the 1/4 cup un-crushed candies to the cream cheese. Mix until completely incorporated (the cream cheese should turn light pink)
  • Turn the mixer to low speed and add powdered sugar 1 cup at a time to the mixer. Combine completely before adding another cup of sugar. The mixture needs to be really stiff and dry(ish). To test, pinch some of the fudge off and roll it into a ball, if it stays in the ball without going flat it's thick enough. Add more sugar if it's not this consistency.
  • Spread evenly into the prepared pan. Refrigerate 30 minutes to 1 hour. They will cut much cleaner when cold.
