CHEF JOHN'S BEURRE BLANC

Although beurre blanc purists would object to the bit of cream in this classic sauce, it does help create a more stable base, enhances the flavor, and makes an even more beautiful color than when made without. Have all the ingredients measured and handy before starting as this sauce comes together rather quickly.

Chef John's Beurre Blanc image

Steps:

  • Place wine, lemon juice, cream, shallots, and cream in a saucepan. Bring to a simmer over medium-high heat. Reduce heat to medium, and let simmer until liquid is reduced by about 75%, 4 to 5 minutes. Reduce heat to the lowest setting and whisk in about 2 cubes of butter. Keep butter moving until it melts. When melted, add a few more cubes, whisking continuously so butter emulsifies into the wine/lemon juice mixture.
  • Continue to add butter, a few cubes at a time until all of it has been incorporated and the sauce has a thick, luxurious texture, 4 to 6 minutes. Remove from heat. Taste for seasonings and add a pinch of salt and cayenne, if desired. Serve immediately.

Pretzel Chicken With Beurre Blanc Sauce image

Steps:

  • Stir pretzel crumbs, bacon bits, cheese, parsley, salt & pepper together well in a bowl large enough to let you dip chicken breasts into it. Set aside.
  • In another bowl large enough to dip chicken breasts, whisk together batter mix & beer.
  • If mixture seems too thick--it should be the consistency of very lightly whipped cream--add a little more beer a tablespoon at a time.
  • Preheat oven to 375 degrees.
  • Heat butter& oil in lge skillet over medium-high heat.
  • Dip each piece of chicken in batter mixture, letting excess drip off, then cover well with pretzel crumb mixture.
  • Place in skillet & saute 2 minutes per side or until golden brown& not quite cooked through.
  • Transfer to a baking sheet & finish cooking in oven 5 to 7 minutes more.
  • TO MAKE BEURRE BLANC SAUCE: In heavy saucepan, melt butter over med heat.
  • Add shallots & saute 2 minute.
  • Add wine & chicken base. Stir to dissolve base.
  • Bring to a simmer & cook 5 to 8 minutes, or until most liquid has evaporated.
  • Stire in heavy cream & return to a simmer.
  • Mix cornstarch & water together.
  • Slowly stir into cream mixture & continue cooking& stirring until mixture thickens & coats back of a wooden spoon dipped into it.
  • Simmer another 1 or 2 minutes.
  • If using mustard, stir in during last minute of simmering.

1 cup pretzel crumb (about 2 cups before grinding)
1/4 cup bacon bits

1/2 cup dry white wine
2 teaspoons chicken base (Better than Chicken Bouillon)
1 2/3 cups heavy cream
3 teaspoons cornstarch
3 teaspoons water
1 teaspoon grainy mustard (optional)

Crispy pretzel chicken with honey-mustard sauce image

Steps:

  • Heat oven to 200C/180C fan/gas 6. Crush the pretzels in a food processor or bash up in a plastic bag using a rolling pin. Transfer pretzel crumbs to a plate. Season the chicken, toss in flour, dip into the egg, then roll in the pretzel crumbs. Place on a baking tray, drizzle over the oil and bake for 35 mins until crisp and tender.
  • In a small bowl, mix the mustard, honey and vinegar. Reserve 4 of the chicken thighs for lunch. (You can use them in the Caesar salad with crispy chicken recipe, look at 'Goes well with...') Serve the remaining chicken with the sauce and green veg or salad and potatoes.

PRETZEL CHICKEN WITH DIJON OR HONEY MUSTARD DRESSING

I love pretzels with mustard and this recipe really shows off that wonderful pairing. It is a great chicken recipe that yields a crispy and flavorful crust and tender juicy meat. Depending on the flavor you want to experience you can use Honey Mustard or Dijon. To ensure a crisp crust, it's imperative to use thick, hard pretzels, like sourdough or Salzstangen. WINE: A fruity wine with some sweetness, like a German Riesling, makes a nice counterpoint to the salty pretzel, and works even better as a complement to pretzels and Dijon mustard. This choice works well with the Honey Mustard also as it will make your wine seem drier than it really so a Riesling will be a nice balance. I chose a sweet 2004 St. Urbans-Hof Riesling which paired nicely. If you want a wonderful taste sensation try a 2001 Langwerth von Simmern Erbacher Marcobrunn Spatlese Riesling that is not quite as sweet.

Pretzel Chicken With Dijon or Honey Mustard Dressing image

Steps:

  • Preheat the oven to 400°.
  • In a blender or food processor, pulse the hard pretzels until coarsely ground with the cayenne (optional); you are going for a mixture that has both coarse and ground pretzels. Transfer to a shallow bowl or plate and set aside.
  • In a clean blender or food processor, add oil, mustards, water and vinegar (and optional cayenne) and blend until smooth. Season the dressing with salt and pepper, to taste.
  • Add half of the dressing to another shallow bowl or container, add chicken and coat with dressing. Dredge the chicken in the pretzel crumbs to cover all sides and transfer to a rack that is placed on a rimmed baking sheet.
  • Place chicken in the upper third of the oven and bake for 20 to 25 minutes, or until cooked through. Slice or serve whole and either warm or at room temperature with the remaining mustard dressing.

Roasted Garlic and Herb Beurre Blanc - an Amazing Sauce image

Steps:

  • In a saucepan over medium temperature, combine the wine, shallots, and garlic, and reduce until the wine just covers the shallots.
  • Add the cream or half and half and reduce again until the mixture is thick and syrupy, stirring occasionally.
  • Reduce the temperature to very low and gradually whisk the pieces of butter into the mixture, one cube at a time (alternately, you can remove it from the heat and - using an immersion blender - emulsify the butter into it one piece at a time; this is the method we used during class).
  • Do not allow the sauce to become either too hot or too cold or it will break.
  • Season to taste with salt and freshly ground pepper, stir in the remaining ingredients (the herbs), and serve immediately.
  • Note: we've served this over pork, chicken, rabbit, and vegetables - delicious!
  • Also, feel free to experiment with other herbs than listed above.
