PROSCIUTTO-WRAPPED FIGS
Steps:
- Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
- Cut the figs in half and wrap a slice of prosciutto around each fig half, with the ends of the prosciutto overlapping. Place each wrapped fig on the baking sheet. Drizzle each fig with olive oil, rosemary, salt and pepper.
- Cook the figs until the prosciutto is brown and crispy, 4 to 5 minutes. Serve warm.
PROSCIUTTO WRAPPED FIGS

- Preheat oven to 400 degrees F. Line a baking sheet with parchment paper; set aside.
- Cut a small hole in the center of the flesh of each fig. Fill each hole with 1/4 teaspoon of goat cheese.
- Take a prosciutto slice and tear in half. Use 1 half to diagonally wrap around the fig, starting from the top. Tuck underneath at the ends. Repeat until all figs are wrapped. (Secure with toothpicks if necessary.) Place wrapped figs on prepared baking sheet, evenly spaced.
- In a small bowl, combine honey and pumpkin pie spice. Drizzle honey evenly over each fig.
- Place in the oven on the top rack and roast for 8 to 10 minutes. Remove and serve immediately.
PROSCIUTTO-WRAPPED BREADSTICKS

- Preheat the oven to 350 degrees F.
- Line a heavy large baking sheet with a silpat (nonstick baking mat) or parchment paper. Tear the dough along the perforations into strips. Using a pizza cutter or a large sharp knife, cut each dough strip in half lengthwise to form thin strips. Working with 1 dough strip at a time, roll each dough strip in the Parmesan cheese and twist. Transfer the dough strips to the prepared baking sheets.
- Bake until the breadsticks are golden brown and crisp, about 20 minutes. Cool the breadsticks completely on the baking sheet.
- Before serving, wrap 1 slice of prosciutto around each cooled breadstick. Arrange the prosciutto-wrapped breadsticks on a platter.

- Make the fig spread:
- In a small saucepan simmer the figs in the Port and the water with the sugar, covered, for 20 minutes and simmer the mixture, uncovered, until the liquid is reduced to about 1 tablespoon. In a food processor (preferably small) purée the fig mixture with the mustard and the lemon juice and transfer the spread to a small bowl. The fig spread may be made 1 week in advance, kept covered and chilled, and allowed to return to room temperature.
- Working with 1 prosciutto slice at a time, spread one side of each slice with 1/2 teaspoon of the fig spread, fold the slice lengthwise into a thin strip, and wrap it in a spiral around 1 of the breadsticks. The breadsticks should be wrapped no more than 30 minutes in advance.
BREADSTICKS WRAPPED IN PROSCIUTTO

- Preheat oven to 350 degrees F. In the bowl of a food processor pulse flour, salt and baking powder to combine. Add the shortening and pulse until the mixture resembles coarse meal. With machine running, gradually add between 1/2 and 3/4 cup ice water until the dough comes together, about 1 minute.
- Transfer dough to a lightly floured surface. Form into a smooth rectangle, about 4 by 6 inches, with your fingers. Then roll out the dough into an 8 by 10-inch sheet, 1/4-inch thick. Cut dough lengthwise into 1/4-inchwide strips.
- Using your hands, gently roll each strip back and forth into 16-inch long sticks. For the twisted version, grab each end of the dough strip with your fingers and carefully stretch and twist the strip in opposite directions. Arrange sticks on 2 baking sheets, side by side but not touching. Lightly brush with olive oil. Press ends onto the baking sheet to keep the sticks straight while they bake.
- Bake until firm and cooked through, 14 to 18 minutes. Transfer to a wire rack to cool. Wrap a slice of prosciutto around each breadstick. Arrange on a platter and serve.

- Preheat the oven to 450 degrees F. Line a baking sheet or cookie sheet with parchment.
- Mix the Parmesan and cayenne together until well combined.
- Wrap each breadstick with a slice of prosciutto, then sprinkle with the Parmesan mixture.

ROASTED FIGS AND PROSCIUTTO

- Preheat the oven to 425 degrees F.
- Snip the hard stems off the figs and cut the figs in half lengthwise through the stem. With a small sharp knife, cut the prosciutto lengthwise into inch-wide strips. Wrap a strip of prosciutto around the center of each fig half, with the ends overlapping. Brush with olive oil and arrange cut-side up on a sheet pan.
- Roast the figs for 10 minutes, until the prosciutto is a little crisp and the figs are warmed through. Serve warm.
