Steps:

  • Preheat the oven to 400 degrees.
  • For the vegetables, place the butternut squash, potatoes, parsnips, and carrots on a sheet pan and drizzle with 1/3 cup olive oil. Sprinkle with 1 tablespoon salt and 1 teaspoon pepper and toss together. Spread out in a single layer and roast for 30 minutes, turning once during cooking. After 30 minutes, toss with the garlic and roast for another 10 minutes, until all the vegetables are tender and starting to brown.
  • Meanwhile, line another sheet pan with aluminum foil, and place a baking rack on top of the foil. Brush the fish fillets on both sides with olive oil and season them liberally with salt and pepper. Wrap each fillet with a slice of prosciutto to form a wide band around the center of the fillet, overlapping the ends on the skin side. Arrange the fillets on the rack with the prosciutto seam side down and roast for 10 to 15 minutes, until barely cooked.
  • While the vegetables and fish are roasting, melt the butter over medium heat in a medium-size saute pan. Add the rosemary sprigs and cook over low heat until the rosemary leaves are crisp and the butter begins to brown, about 5 minutes. Discard the rosemary, stir in the lemon juice, and set aside.
  • To serve, place the fish on a platter or individual plates, spoon the rosemary butter on top, and surround with the vegetables. Garnish with lemon wedges and serve hot.

2 cups peeled, seeded, and (1/2-inch) diced butternut squash
2 cups peeled and (1/2-inch) diced Yukon Gold potatoes (2 medium)
2 cups peeled and (1/2-inch) diced parsnips (3 parsnips)
2 cups peeled and (1/2-inch) diced carrots (6 carrots)
Good olive oil
Kosher salt and freshly ground black pepper
1 tablespoon minced garlic (3 cloves)
6 (8-ounce) skinless fish fillets such as striped bass or halibut
6 thin slices prosciutto di Parma
1/4 pound (1 stick) unsalted butter
6 sprigs fresh rosemary
3 tablespoons freshly squeezed lemon juice
Lemon wedges, for serving

Steps:

  • Preheat the oven to 450 degrees F. Cut the bulbous end off the squash and reserve for another use. Remove the stem, then peel the remaining squash and cut in half crosswise. Using a spiralizer, shave the squash into ribbons.
  • Put the squash on a baking sheet and toss with the oil. Sprinkle generously with salt and pepper and roast until tender but still firm, 10 to 15 minutes.
  • Meanwhile, heat 1 tablespoon butter in a large skillet over medium heat until melted. Add the prosciutto in a single layer and cook until golden and curled around the edges, flipping with tongs halfway through, about 2 minutes per side. Transfer to a plate to cool, then coarsely crumble.
  • Add the remaining 5 tablespoons butter to the drippings in the skillet along with the sage leaves and a pinch of salt, and cook, stirring often, until the butter is a dark brown color, about 4 minutes. Remove from the heat.
  • Put the squash on a serving platter and drizzle with the butter and sage leaves. Top with the Parmesan and coarsely crumbled prosciutto. Serve immediately.

1 large butternut squash (about 3 pounds)
2 tablespoons olive oil
Kosher salt and freshly ground black pepper
6 tablespoons unsalted butter, cut into cubes
2 ounces thinly sliced prosciutto (about 4 slices)
5 fresh sage leaves
1/2 cup shaved Parmesan (about 2 ounces)

ROASTED SQUASH WITH PROSCIUTTO

Not only is this roasted butternut squash delicious as is - spiked with crispy prosciutto and maple syrup - but the leftovers also are equally delicious turned into soup. Combine the leftovers with a quart or two of chicken broth, some chopped carrots and potatoes, and some leftover chicken or turkey. There is no need to buy the pricier imported prosciutto for this recipe; the more affordable domestic varieties work well.

  • Peel and cube a butternut squash, reserving the seeds and measuring out approximately 3 1/2 cups.
  • In a large saucepan, melt the butter and add the garlic and onion, sautéing until the onion is soft and translucent, approximately 5 minutes. Add the cubed squash and fry for 4-5 minutes. Add the broth and bring to a boil. Simmer the squash for 15-20 minutes, covered, or until the squash can be easily pierced with a fork.
  • While the squash is simmering, begin boiling the water for the pasta. Cook the pasta for 8-10 minutes or until al dente. Rinse and drain.
  • Preheat the oven to 400 F and line a baking sheet with parchment paper. Place the prosciutto in a single layer on the baking sheet. Bake the prosciutto for 8-10 minutes, or until crisp. Set aside. This is also when I typically roast the squash seeds, for about 10 minutes, while the oven is still hot.
