- Heat broiler with rack set 4 inches from heat. Place shrimp on a large broilerproof rimmed baking sheet.
- Sprinkle with oil and garlic, and season generously with salt and pepper; toss to coat. Arrange shrimp in a single layer.
- Broil until opaque throughout, 3 to 4 minutes. Sprinkle with lemon juice and parsley; toss to combine. Serve immediately; garnish with lemon wedges.

What's the excitement all about? Do we love shrimp scampi because it's simple but seemingly fancy? Or because it's done in 30 minutes? Or because we just can't resist a buttery wine sauce? All of the above!

- Bring a large pot of salted water to a boil. Add the linguine and cook as the label directs. Reserve 1 cup cooking water, then drain.
- Meanwhile, season the shrimp with salt. Heat the olive oil in a large skillet over medium-high heat. Add the garlic and red pepper flakes and cook until the garlic is just golden, 30 seconds to 1 minute. Add the shrimp and cook, stirring occasionally, until pink and just cooked through, 1 to 2 minutes per side. Remove the shrimp to a plate. Add the wine and lemon juice to the skillet and simmer until slightly reduced, 2 minutes.
- Return the shrimp and any juices from the plate to the skillet along with the linguine, butter and 1/2 cup of the reserved cooking water. Continue to cook, tossing, until the butter is melted and the shrimp is hot, about 2 minutes, adding more of the reserved cooking water as needed. Season with salt; stir in the parsley. Serve with lemon wedges.
CLASSIC SHRIMP SCAMPI
Scampi are tiny, lobster-like crustaceans with pale pink shells (also called langoustines). Italian cooks in the United States swapped shrimp for scampi, but kept both names. Thus the dish was born, along with inevitable variations. This classic recipe makes a simple garlic, white wine and butter sauce that goes well with a pile of pasta or with a hunk of crusty bread. However you make the dish, once the shrimp are added to the pan, the trick is to cook them just long enough that they turn pink all over, but not until their bodies curl into rounds with the texture of tires.

- In a large skillet, melt butter with olive oil. Add garlic and sauté until fragrant, about 1 minute. Add wine or broth, salt, red pepper flakes and plenty of black pepper and bring to a simmer. Let wine reduce by half, about 2 minutes.

GRILLED SHRIMP SCAMPI

- Put the shrimp in a large baking dish.
- Combine the canola oil, garlic, red pepper flakes and fennel seed in a small food processor and process until the garlic is somewhat paste-like. Pour this mixture over the shrimp and let them marinate for 30 minutes.
- Light a grill to high heat.
- Strain the shrimp from the marinade and season them with salt and black pepper, to taste. Grill the shrimp on both sides until they are slightly charred and just cooked through, about 2 minutes per side (see Cook's Note). Transfer the shrimp to a plate.
- Melt the butter in a large saute pan set over the grates of the grill. Add the lemon zest, lemon juice, tarragon and thyme leaves and cook for 30 seconds. Add the shrimp and cook, tossing once, about 1 minute. Finish with the parsley and adjust the seasonings, if necessary. Transfer the shrimp to a serving platter and garnish with thyme and parsley.

- Boil water for the pasta and have it ready.
- Melt the butter and heat the olive oil in a large skillet over medium heat. Add the garlic and onions and cook until the onions are translucent, 2 to 3 minutes. Add the shrimp, then stir and cook for a couple of minutes. Squeeze in the lemon juice. Add the wine, hot sauce, salt and pepper. Stir and reduce the heat to low.
- Throw the angel hair pasta into the boiling water. Cook until just al dente. Drain, reserving a cup or 2 of the pasta water.
- Remove the skillet from the heat. Add the pasta and toss, adding a splash of pasta water if it needs to be thinned. Taste for seasoning, adding salt and pepper if needed. Top with the grated Parmesan and minced parsley and serve immediately.

- 1. Preheat oven to medium. Put bread crumbs in a bowl and mix with enough olive oil to moisten well. Add lemon juice and salt and pepper to taste. Stir in parsley. Roll shrimp in mixture til well coated.
- 2. Layer shrimp in an oiled casserole and spread a little of the leftover bread crumbs on the top. Sprinkle with olive oil and bake for about 5 minutes or til crumbs form a golden crust. Put under broiler briefly to brown. Serve with lemon wedges.
SCAMPI ALLA GRIGLIA

- Shell the shrimp, but be careful not to remove the last segment of shell or tail. With a smalll knife, slit each shrimp down the back and lift out the black or white intestinal vein. Wash the shrimp quickly under cold water and pat them thoroughly dry with paper towels.
- Preheat the broiler to its highest temperature. In a shallow flameproof baking dish or pan just large enough to hold the shrimp in one layer, melt the butter over low heat, and be careful not to let it brown. Stir in the 1/2 cup of olive oil, lemon juice, shallots, garlic, salt and a few grindings of pepper, add the shrimp and turn them in the butter and oil until they glisten on all sides.
- Broil them 3 to 4 inches from the heat for 5 minutes, then turn the shrimp over and broil them 5 to 10 minutes longer, or until they are lightly browned and firm to the touch. Becareful not to over cook them.
- With tongs, transfer the shrimp to a heated serving platter, pour the sauce from the pan over them, and sprinkle with chopped parsley. Garnish with lemon quarters, and serve.
SCAMPI ALLA GRIGLIA (BROILED SHRIMP)

- Place the shrimp in a large, shallow baking dish big enough to hold them in a single layer. Combine the butter, olive oil, garlic, shallots, salt, and pepper in a mixing bowl and pour over the shrimp. Place the dish 3 to 4 inches (8 to 10 cm) under a preheated broiler and cook for 5 minutes. Turn the shrimp over and broil for another 5 to 10 minutes, until the shrimp are lightly browned and firm to the touch - do not overcook. Transfer the shrimp to a serving platter and pour the remaining sauce over them. Garnish with chopped parsley and lemon wedges. Serves 4 to 6.
