MELON WRAPPED IN PROSCIUTTO

PROSCIUTTO-WRAPPED CROSTINI WITH MELON SALSA CRUDO

- Preheat the oven to 375 degrees F.
- Cut the loaf of bread in half crosswise, then cut each half lengthwise into 1-inch thick slices. Lay the slices in a single layer on baking sheets. Generously drizzle the top side of each slice with olive oil and season with salt and pepper to taste. Sprinkle the Parmesan over the slices. Cook in the oven until golden brown, about 10 to 12 minutes. Set aside.
- Marinate the onions in the vinegar for 5 minutes. While the onion is marinating, peel, seed and dice the melon and place in a bowl. Add the diced melon to the onions, season with salt and stir to blend together. Add the minced parsley and stir to combine.
- Wrap the end of each crostini with a piece of prosciutto. Arrange on a platter and spoon a tablespoon of melon salsa on each and serve. Serve remaining salsa on the side.

To me nothing says the holidays like appetizers, we serve them, and bring them to holiday parties. This appetizer was born out of my way to use shrimp. We live here in Fl right on the ocean and have friends that shrimp, so I am always dreaming up ways to fix shrimp

- 1. Marinate the shrimp in 3 tablespoons of lime juice while you make the tropical mango salsa.
- 2. In a bowl combine the mango, papaya, jalepenos, onions,cilantro, red peppers, and lime juice
- 3. Take one slice of prosciutto, place a slice of melon in the middle, put a shrimp on top of that, put a teaspoon of cream cheese on top of shrimp.
- 4. Wrap each end of prosciutto over filling, cover and refridgerate until ready to serve.
- 5. Serve the prosciutto wrapped shrimp with the mango salsa.
POACHED SHRIMP WITH MELON
Steps:
- In a large pot put the shrimp, lemons cut in half, peppercorns, and a pinch of salt together. Fill with cold water just to cover the shrimp. Place the pot on high heat to boil. In the meantime put a strainer in the sink, and also fill a large bowl with ice and cold water. When the water reaches a boil the shrimp are cooked. Strain the shrimp from the water, and then plunge the hot shrimp into the ice water. This stops the cooking process immediately. Leave the shrimp in the cold water for a few minutes. Strain and reserve in the refrigerator. Peel and seed the melons, and dice into medium size pieces, or around the same size as the shrimp. Separate the diced melon from the trimmings. This is what we will make the dressing out of. In a blender combine half of the melon pieces, half of the mint, and half the olive oil. Blend until smooth. In a large mixing bowl put the shrimp, diced melon, and the dressing. Mix well and season with salt and pepper. Transfer to a serving vessel, and garnish with remaining mint leaves and drizzle with olive oil. Season the top with salt and cracked pepper.

- Combine oil, vinegar, basil and garlic in a bowl. Add the shrimp and marinate overnight in the refrigerator. Preheat broiler.
- Drain shrimp. Cut each piece of prosciutto in half, lengthwise and wrap around each shrimp, securing well with a toothpick.
- Saute the shrimp in a non-stick pan, that has been heated and lightly brushed with olive oil. Cook only to seal the prosciutto to shrimp. Place each piece on broiler pan and grill under broiler for 2 minutes on each side. Careful not to burn the prosciutto or overcook the shrimp.
MELON AND PROSCIUTTO WRAPS

- Scoop out seeds from each melon half. Cut each half into 6 wedges. Remove melon skins. Wrap 1 or 2 slices of prosciutto around each wedge. Secure prosciutto with 4 toothpicks. Cut each wedge into 4 bite-sized pieces. Cover and refrigerate.
- Serve chilled.
- (Can be made 2 to 3 hours ahead of time and chilled. Make sure melon wedges are well wrapped so that they do not dry out.)

- Prepare the cantaloupe and cut it into wedges. I find it easier to peel the cantaloupe, once you cut it. So, first, cut the cantaloupe in half. Using a spoon, remove the seeds. Then cut each half into wedges and peel them.
- Wrap the prosciutto around the cantaloupe wedges and arrange them on a serving platter (left some wedges without prosciutto, since I had more cantaloupe to use up).
- Drizzle a little bit of balsamic glaze or quality honey (or both, if you like) If using, arrange a few basil leaves on the platter. I loved the addition of fresh basil leaves for a pop of color and freshness, but this is totally optional.
