Steps:

  • Assemble shrimp toasts:
  • Pulse shrimp, ginger, oil, Sherry, soy sauce, and egg white in a food processor to a coarse purée. Stir together with cilantro, scallions, and 1/4 teaspoon salt. Spread on bread (a scant tablespoon each).
  • Make bacon-wrapped pineapple:
  • Preheat oven to 450°F with rack in middle.
  • Wrap 1 piece of bacon around each pineapple chunk, then wrap scallion around outside, securing with a wooden pick. Arrange in a parchment-paper-lined 4-sided sheet pan. Bake, turning once, until bacon is crisp, 15 to 20 minutes.
  • Meanwhile make beef teriyaki:
  • Stir together soy sauce, vinegar, garlic, and ginger.
  • Thinly slice zucchini lengthwise with slicer. Put each slice of steak on a slice of zucchini, then thread lengthwise onto a skewer. Brush with soy mixture. Arrange skewers, meat side up, on an oiled broiler pan.
  • When pineapple has finished cooking, preheat broiler. Broil skewers 5 to 7 inches from heat until browned, 2 to 3 minutes.
  • Meanwhile, fry shrimp toasts:
  • Heat 2 inches vegetable oil to 360° in a 4-quart saucepan over medium-high heat.
  • Fry 8 bread rounds, shrimp sides down, until browned, about 1 minute. Turn and fry until golden, about 30 seconds. Transfer to paper towels to drain. Fry remaining rounds.
  • To serve:
  • Arrange skewers, bacon-wrapped pineapple, and shrimp toasts on a platter.

For shrimp toasts:
1/2 pound shrimp, peeled and deveined
1 tablespoon finely chopped peeled ginger
1 tablespoon Asian sesame oil
1 tablespoon medium-dry Sherry
1 tablespoon soy sauce
1 large egg white
2 tablespoons finely chopped cilantro
2 scallions, finely chopped
6 slices firm white sandwich bread, cut into 1 1/2-inch rounds (24 total)
About 6 cups vegetable oil for frying
For bacon-wrapped pineapple:
12 slices bacon (about 3/4 pound), halved crosswise
1 (1 1/2-pounds) pineapple, peeled, cored, and cut into 24 (1-inch) chunks
1 bunch scallions, greens cut into 5-inch-long pieces and halved lengthwise
For beef teriyaki:
3 tablespoons soy sauce
2 tablespoons seasoned rice vinegar
2 garlic cloves, minced
2 teaspoons grated peeled ginger
1 medium zucchini
1/2 pound flatiron steak, cut across grain into 1/8-inch-thick slices
24 wooden picks; 24 (6-inch) bamboo skewers, soaked in water for 30 minutes; Equipment: an adjustable-blade slicer; a deep-fat thermometer
Accompaniment: hoisin and Sriracha sauce

AMAZING PUFF BALLS

These are wonderful! My cousin brought them as an appetizer for Thanksgiving dinner one year, and I got the recipe. I make them for work parties, and even quick snacks at home. You can always make more or less by using more or less cream cheese and crescent rolls! Trust me, these are excellent!

  • Season the flour with a couple good pinches of salt and mix well. If you can grind the salt in a spice grinder, do it.
  • If you haven't already, slice off the root end of the puffball and inspect for any bug damage, the flesh of the mushroom should be perfectly white, not at all greenish-yellow.
  • Using a long, sharp slicing knife, slice the puffball into 1/2 inch or so slices. Liberally coat the mushroom slices in flour, then tap off the excess and dip them in beaten egg, then the panko breadcrumbs. Heat a generous amount of oil in a pan (1/4-1/2 a cup should be good depending on the size of your mushroom slices) then, when sizzling hot, add the puffballs and cook until golden brown on each side.

10 HAWAII PUPU DISHES THAT ARE THE LIFE OF THE PARTY

From hawaiimagazine.com
  • Cone sushi. Also known as inari (or inari zushi), this is a quick and simple local favorite. In inari, the “cone” wrapper that describes this sushi variety, is age, a fried bean curd.
  • Boiled peanuts. The Hawaii version of this classic snack, believed to have Chinese roots, is a great low-maintenance option for those of us who can’t cook.
  • Sashimi. Want an easy in with strangers at the company holiday party? Bring sashimi. Finely trimmed, raw or marinated sashimi is one of Hawaii’s popular pupu, especially for New Year’s Eve, so plan accordingly—fish is going to go fast!
  • Pipikaula. Most easily described as “Hawaiian beef jerky,” this salted and dried beef delicacy can’t be beat. It’s spicy, without being leather dry, and can be flavored in so many different ways (just ask Helena’s).
  • Smoked tako. No matter what marinade and seasonings you choose—kim chee, misoyaki, onion, limu (seafood)—cut your tako, or octopus, up into modest bite-sized pieces and you’ve got one of the most delicious and dynamic pupu on your hands.
  • Char siu. This requires some portion control, but roasted Chinese pork makes for some great snacking.
  • Pulehu steak, pupu-style. Same thing applies to this steak entree—it’s a pupu if you cut it into small enough pieces! Pulehu is the Hawaiian word for “to broil,” and refers to a meat that’s rubbed first with a seasoning mix, usually Hawaiian salt.
  • Filipino lumpia egg rolls. This version of egg rolls, prepared Filipino-style, is filled with mined meats and vegetables. A popular favorite, found at all Filipino festivals, restaurants and Hawaii parties.
  • Edamame. Can’t go wrong with a bowl of soy beans. Just serve them with a sweet and sour dipping sauce or with some simple shoyu and you’re good to grind.
