BUTTERFLY CUPCAKES
recipe i found in "Kid's night in! 2", recipe by Kylie Kwong, i'm just posting it to tell others. haven't tried it yet, so take pictures!!!! :D MAKES 24

Steps:
- Cream butter and sugar together in a bowl until light and fluffy.
- Add eggs one at a time, beating each in until combined. Add sifted flour, milk and vanilla essence.
- Spoon mixture into patty tins lined with paper patty cups. Bake in moderate oven (190C.) towards the top of the oven for about 20 minutes or until golden brown.
- Slice tops off cooled cakes, and fill cakes with freshly whipped cream. Carefully cut tops in half lengthways and arrange these 'butterfly wings' on the cream.
- Place a strawberry half in the centre of the wings. Dust with icing sugar before serving.

MILK-CHOCOLATE PUDDING CUPCAKES
The cupcakes here, inspired by the squiggly-topped childhood favorite, are plumped up with a chocolaty pudding filling, topped with a ganache glaze, and crowned with elegant chocolate curls. Martha made this recipe on Martha Bakes episode 603.

- Preheat oven to 350 degrees. Line 18 standard muffin cups with paper or foil liners. In a large bowl, whisk together flour, baking powder, and salt. In a separate bowl, beat butter with sugar on medium speed until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Reduce speed to low and add flour mixture in 2 batches, alternating with milk. Beat in melted chocolate.
- Divide batter evenly among muffin cups, filling each about two-thirds full. Bake until a tester inserted in centers comes out clean, 18 to 20 minutes. Let cool in pan on a wire rack 5 minutes, then remove cupcakes and let cool completely on rack. (Cupcakes can be made ahead up to this point and stored in an airtight container at room temperature up to 2 days.)
- Transfer pudding to a pastry bag fitted with a 1/4-inch plain round tip. Insert tip in top of a cupcake and squeeze until cupcake begins to mound. Repeat with remaining cupcakes. Refrigerate until cold, about 30 minutes and up to 1 day. Spoon about 2 teaspoons ganache over top of each cupcake; top with chocolate curls. Refrigerate at least 15 minutes before serving.

- Heat the oven to 180C/160C fan/gas 4. Line a cupcake tin with 10 cases. To make the sponge, tip the butter, sugar, eggs, vanilla, flour, baking powder and milk into a large mixing bowl and beat with either a hand whisk or electric mixer until smooth, pale and combined. Divide the batter between the cases and bake for 15 mins until golden brown and a skewer inserted in the middle of a cake comes out clean. Leave on a wire rack to cool.
- While the cakes are cooling, make the buttercream by beating together the icing sugar, butter and vanilla until pale and fluffy. Mix in the extra milk if the icing feels too stiff.
- Once the cakes are cool, use a sharp knife to slice off the tops, then cut the tops in half. Pipe or spread the buttercream on top of the cakes, then gently push two semi-circular halves into the buttercream on each cake, doing this at an angle to look like butterfly wings. You can serve the cupcakes at this stage, or decorate them with a little blob of jam in the centre and a scattering of sprinkles, if you like.

- Prepare cake mix according to package directions using the "cupcake" directions (should make 18-24 cupcakes).
- Scoop frosting into a medium-sized bowl. Using a hand mixer or stand mixer, mix on high-speed until frosting amount seems to double (you are whipping air into it to make it lighter and fluffier). Don't whip too long or it will flatten again.
- When the cupcakes have cooled, cut a cone shape out of the top of the cupcake by placing the knife at an angle into the cupcake top and cutting a circle, leaving the tip of the knife at the center of the cupcake.
- Remove the cut-out "cone" from the center of the cupcake and fill the hole with whipped cream (you can also use pudding, jam, berries, pie filling or frosting.. my kids wanted the whipped cream so that is what we went with).
