Steps:

  • Grease a 9x13-inch pan. Place puffed wheat in a large heat-proof bowl; set aside.
  • Bring corn syrup, white sugar, butter, cocoa powder, and brown sugar to a boil in a heavy saucepan. Remove cocoa mixture from heat; stir in vanilla extract. Pour cocoa mixture over puffed wheat cereal; stir until well combined.
  • Press puffed wheat mixture into prepared pan. Allow to cool completely before cutting into bars.

Steps:

  • Line an 8×8 pan with aluminum foil and spray with cooking spray. Set aside. Pour puffed millet into a large mixing bowl and set aside. In a small saucepan, combine coconut butter, honey, and cocoa powder. Heat over medium, stirring continuously. When it starts to boil, remove from heat. Pour liquid ingredients over puffed millet and stir with a spatula. Add optional chocolate chips (they will melt) and stir well. Pour into pan and press down with a spatula. Take a piece of parchment/wax paper and spread over top. Press down hard with your hands or a hard object (like the side of a glass). Chill for at least 2 hours, uncovered, before cutting into squares. Bars should be stored in the fridge in an airtight container. Notes and Substitutions: *I used Nature's Path puffed millet, purchased at Bulk Barn. Any puffed wheat cereal could also be used if you're not avoiding gluten. **Coconut butter: Empty a bag of shredded, unsweetened coconut into a food processor and blend until it reaches the consistency of peanut butter. Scrape down the sides as needed. This takes anywhere from 5-15 minutes. Store it in the fridge and pop it in the microwave in 20-second intervals before using. It's also a great spread on pancakes. Puffed Millet and Brown Rice Treats image

Steps:

  • Line a 9-inch by 13-inch pan with foil, leaving a 2-inch overhang on two sides. Lightly coat the foil and a wooden spoon with cooking spray.
  • Melt the butter in a medium saucepan over medium heat. Add the marshmallows, honey, vanilla and salt. Stir with the prepared wooden spoon until the marshmallows have completely melted, 4 to 5 minutes. Add the rice cereal and puffed millet and stir until the mixture is fully combined. Transfer the mixture to the prepared pan and press into an even layer. Let sit at room temperature until firm, about 20 minutes.
  • Using the overhanging foil as handles, lift the treats out of the pan and invert onto a cutting board. Cut into 15 pieces. The treats can be refrigerated in an airtight container for up to a week. Let sit at room temperature for 30 minutes before serving for a gooier texture.

In a separate bowl or liquid measuring cup, whisk together the melted coconut butter, almond butter, melted coconut oil, maple syrup, and vanilla extract. Pour the mixture over the puffed millet and stir until the puffed millet is fully coated.
