FRIED CHEESE WITH PURPLE PRIDE SAUCE

Fried Cheese with Purple Pride Sauce image

Steps:

  • Heat the peanut oil in a deep-fryer or heavy-bottomed pot to 375 degrees F.
  • Cut the mozzarella into 1/2 by 1/2 by 2-inch strips and wrap them with prosciutto. Mix the flour, garlic powder, onion powder and paprika together in a bowl. Add the buttermilk and egg and whisk until combined. In a shallow bowl, combine the panko and finely shredded Parmesan.
  • Insert skewers into the mozzarella, dip them into the batter, then coat them with the panko mixture.
  • Deep-fry, in batches if necessary, until golden brown, approximately 2 minutes. Transfer the mozzarella to a serving platter.
  • Combine all of the dipping sauce ingredients, except the blackberries, in a medium bowl. Mash the blackberries through a metal strainer to remove the seeds.
  • Mix the blackberry juice into the dipping sauce and serve with the cheese sticks.

2 quarts peanut oil
1 pound mozzarella
1/4 pound thinly sliced prosciutto
1 cup all-purpose flour
1/2 tablespoon garlic powder
1/4 tablespoon onion powder
1/4 tablespoon paprika
3/4 cup buttermilk
1 egg
1/4 cup panko bread crumbs
1/4 pound Parmesan, finely shredded
1 cup sour cream
1 cup mayonnaise
2 tablespoons lemon juice
1 tablespoon paprika
1 tablespoon celery salt
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon salt
1 tablespoon freshly ground black pepper
1/2 pound blackberries

PURPLE CHEESE NOODLES SAUCE MIX

There used to be several flavors of mix you could buy that you mixed up with butter and milk to make a pasta/rice sauce. My daughter's favorite was in a purple container, thus the family used to request Purple Cheese Noodles! The mix is no longer sold but this is a close match. Good mixed with bowtie pasta and some french fried onion rings. (For one pound of pasta I use 1 cup mix, 8 tbl butter and 1 cup milk)

  • Mix all ingredients and store in a tightly closed container. Keeps for 4 months in the pantry.
  • TO USE: combine 1/4 cup mix with 2 tablespoons melted butter and 1/4 cup milk.

Steps:

  • Bring a large pot of lightly salted water to a boil. Add noodles and cook for 8 to 10 minutes or until al dente; drain.
  • While noodles are cooking, combine the sour cream, 1/4 cup cheese, chives, salt and pepper in a medium bowl. Mix together.
  • Stir butter into drained noodles, then stir in sour cream mixture. Place on a warm platter and sprinkle with remaining 1/4 cup cheese.

Steps:

  • Measure all ingredients into a large ziploc bag, seal and shake to combine.
  • To use, combine 1/4 cup Noodles Mix with 2 tablespoons butter and 1/4 cup milk in sauce pan (also add tuna at this point if desired);heat over medium heat until warm and butter is melted. Toss with pasta (approximately 3-4 cups cooked).
  • For variety, add 1/4 cup grated Cheddar cheese in place of the Parmesan cheese for a different taste.
