QUAKER OATMEAL COOKIES
Mom used the recipe straight off the box of the Quaker Oatmeal canister. This has always been extra special because of the warm thoughts it brings to me of my Aunt Marshee who worked at the Quaker Oatmeal plant as an executive assistant for most of her professional career.

Steps:
- Beat together shortening, sugars, egg, water and vanilla until creamy.
- Add combined remaining ingredients; mix well.
- Add raisins, nuts or even chocolate chips at the end.
- Drop by teaspoonfuls onto greased cookie sheets.
- Bake at 350 degrees for 12-15 minutes.

- Heat oven to 375 degrees F. In large bowl, beat margarine and sugars until creamy. Add eggs and vanilla; beat well. Add combined flour, baking soda and salt; mix well. Add oats and butterscotch morsels; mix well.
- Drop dough by level tablespoonfuls onto ungreased cookie sheets.
- Bake 7 to 8 minutes for a chewy cookie or 9 to 10 minutes for a crisp cookie. Cool 2 minutes on cookie sheets; remove to wire rack. Cool completely. Store tightly covered.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking pan.
- In a bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a large mixing bowl, mash the butter, white sugar, and brown sugar together until smooth and creamy, and beat in the eggs to make a creamy mixture. Gradually beat in the flour mixture, rolled oats, and 1 1/2 cup of butterscotch chips.
- Press the dough into the prepared baking dish, and sprinkle the top with remaining 1/2 cup of butterscotch chips.
- Bake in the preheated oven until the top is golden brown, 30 to 35 minutes. Allow to cool in the pan before cutting into bars and serving.

- To the bowl of a stand mixer fitted with the paddle attachment (or a large mixing bowl and hand mixer), add the egg, butter, sugars, vanilla, and beat on medium-high to cream ingredients until light and fluffy, about 5 minutes.
