QUEEN OF PUDDINGS

The aptly named Queen of Puddings dates to the seventeenth century,but food historians speculate that its moniker came hundreds of years later, in honor of Queen Victoria. It's a pudding deluxe, consisting of a custardy bread base topped with jam (ours is black currant) and a billowy layer of golden-tan meringue.

Steps:

  • Preheat oven to 350 degrees. Butter six 1 1/2- to 1 3/4-cup oval gratin dishes; set aside.
  • Bring milk, butter, 1/2 cup sugar, the zest, and salt to a simmer in a medium saucepan. Add bread; remove from heat. Let stand, stirring often, 30 minutes.
  • Stir in yolks. Divide evenly among prepared dishes. Bake until just set, about 15 minutes. Let cool on a wire rack 30 minutes. Reduce temperature to 325 degrees.
  • Heat jam in a small saucepan until thin. Spread over tops of puddings.
  • Put egg whites and remaining 1/2 cup sugar into the heatproof bowl of an electric mixer set over a pan of simmering water. Whisk until sugar has dissolved and whites are warm, about 2 minutes. Attach bowl to mixer fitted with whisk attachment. Beat on high speed until medium peaks form. Mound meringue over puddings, leaving a 1/2-inch border.
  • Bake until meringue is golden all over and puddings are heated through, about 10 minutes. Serve immediately.

3/4 teaspoon salt
1 loaf white sandwich bread (about 1 pound), crusts removed, cut into 1/4-inch cubes
4 large eggs, separated, plus 1 egg white
1/2 cup black-currant jam

Steps:

  • Put the bread crumbs, vanilla sugar and lemon rind into a pudding basin. Bring milk to boil and stir it into the crumbs. Leave for 10 minutes.
  • Preheat oven to 325 degrees.
  • Butter a shallow baking dish that will hold about two-and-a-half pints.
  • Separate the eggs, putting the whites in a large bowl. Beat the yolks into the milk-and-bread-crumb mixture. Bake for 20 to 30 minutes or until just firm. Remove from the oven and cool slightly. Turn the oven down to 250 degrees.
  • Meanwhile, spread the jam or jelly over the custard.
  • Whisk the eggwhites until they stand up in stiff peaks and fold in one tablespoon of sugar. Whisk again until satiny and fold in one more tablespoon of the sugar. Spoon the mixture over the custard and sprinkle with the rest of the sugar. Bake for 15 to 20 minutes, until the meringue is firm and lightly brown. Serve hot or cold, with heavy cream.

SIMPLE BREAD PUDDING

This recipe is proof-positive that leftover bread can easily be converted to dessert without much work. There's room for customization here: consider adding fresh or dried fruit or a combination of spices like cinnamon, nutmeg, allspice and cardamom. It makes a great brunch dish, served with fresh fruit compote. Or add a handful of chocolate chips before baking for a decidedly more decadent outcome.

Steps:

  • Heat oven to 350 degrees. In a small saucepan over low heat, warm milk, butter, vanilla, sugar and salt. Continue cooking just until butter melts; cool. Meanwhile, butter a 4-to-6-cup baking dish and fill it with cubed bread.
  • Add eggs to cooled milk mixture and whisk; pour mixture over bread. Bake for 30 to 45 minutes, or until custard is set but still a little wobbly and edges of bread have browned. Serve warm or at room temperature.
