My husband loves hot dogs any style and this one was pretty inventive fun and yummy.

Steps:
- Top the larger flour tortilla with some shredded cheddar, Monterery Jack, jalapeno and green onion. Top with the smaller tortilla. Pour some queso sauce on top then the hot dog. Roll up and set aside seam side down.
- Repeat with the other 3 hot dogs. Place oil in large skillet and fry the quesadogs until browned on all sides. Warm the remaining queso sauce on pour on top. Serve with sour cream or guacamole if desired.

Steps:
- Heat oil in a nonstick skillet, add one tortilla. Layer with half the cheddar cheese, all of the chicken and mushrooms and half the Monterey Jack cheese. Top with the second tortilla. Cover and heat until cheese melts and bottom tortilla is crisp and golden brown., Turn over; sprinkle remaining cheese on top. Cook until bottom tortilla is crisp and golden brown and cheese is melted. Cut into wedges; serve with sour cream and salsa if desired.

- Prepare tortilla by warming them in a dry, hot skillet or by steaming them. Keep tortillas warm. Place avocado, onion, lemon juice, salt and garlic powder in food processor. Process until smooth.
- In a large bowl, mix together the avocado mixture, 1/2 cup Pepper Jack cheese, sour cream, and 1/2 cup Colby Jack cheese.
- Spread avocado mixture on one side of 3 of the flour tortillas. Top with remaining tortillas and press down gently.
- Preheat broiler and using a pizza cutter, cut each tortilla into 8 triangles. Place on large cookie sheet and sprinkle with remaining 1/2 cup of Colby Jack cheese. Broil about 3 minutes until cheese is just melted.
