QUESO

A smooth and creamy queso is quintessential game-day food, so we took the classic recipe and kicked-it up a notch with jack and Cheddar cheeses. Enjoy it with tortilla chips or any of your favorite dippers for serving.

Steps:

  • Add the processed cheese, Monterey Jack, Cheddar and canned tomatoes (along with the juice) to a medium saucepan or 10-inch cast-iron skillet (see Cook's Note) and turn the heat to medium. Cook, stirring frequently with a rubber spatula, until all the cheese has melted and the queso is smooth, about 5 minutes. Serve immediately with tortilla chips.
  • To make the queso spicy, use hot diced tomatoes and green chiles, such as RoTel Hot, instead of the Original.
  • Processed block cheese is crucial due to its meltability and what it adds to the queso's texture. Do not try to substitute other cheeses.

10 ounces processed block cheese, diced, such as Velveeta (see Cook's Note)
4 ounces Monterey jack cheese, coarsely shredded
2 ounces sharp Cheddar, coarsely shredded
One 10-ounce can diced tomatoes and green chiles, such as RoTel Original (see Cook's Note)
Tortilla chips, for serving

Steps:

  • 1. Poner a hervir el agua, sacarla del fuego y agregar todos los ingredientes menos las yemas. Llevar a fuego medio y dejar cocinar, después que rompa el hervor unos 10 minutos hasta que tome punto. 2. Sacar del fuego, agregar las yemas y mezclar. 3. Poner en molde y llevar al congelador.

3 latas de leche evaporada
3 latas de leche condensada
200 grs.de azúcar
200 grs de coco rallado
20 grs. De maicena Canela
4 yemas de huevo
Clavo

HELADO DE QUESO

The light granular texture of this tasty ice cream is what makes me love it so much. Swirl in some cajeta toward the end of the churning or top it with some berries if you want to add a complementary flavor, though I think it is perfect just as it is.

Steps:

  • Combine the milk, vanilla, sugar, and salt in a small pot and bring to a boil over medium heat.
  • Whisk the egg yolks in a large heatproof bowl. Slowly whisk about half of the hot milk mixture into the yolks and stir rapidly. Return the mixture to the pot and cook over low heat, stirring continuously with a wooden spoon or heatproof spatula, until it is thickened and coats the back of a spoon, 10 to 15 minutes. Add the cheese and stir with a whisk until blended (you can use a hand or standing blender if you want it a little less grainy).
  • Chill over an ice bath, stirring, until cool. Refrigerate, covered, until completely cool, about 3 hours, and freeze in an ice cream maker according to the manufacturer's instructions.

  • Add the 400g evaporated milk and water and let it boil for 10min so it infuses with the coconut, cinnamon and cloves.
  • Add the condensed milk, vanilla and cornflour dissolved in cold water and stir until it boils and thickens.
  • Add 1/4 of the mi onto the yolks and whisk fast so it doesn't curdle. Then put it back into the mix and stir over low heat for an extra 30 seconds - 1 minute so the egg yolks thicken up the mi further.
