Steps:
- Combine 3/4 cup flour, undissolved yeast, sugar and salt in a large bowl. Heat milk, water and butter until very warm (120 degrees to 130 degrees F). Add to flour mixture. Beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally. Add 1/4 cup flour; beat 2 minutes at high speed. Stir in enough remaining flour to make soft dough. Knead on lightly floured surface until smooth and elastic, about 8 to 10 minutes. Cover; let rest 10 minutes.
- Divide dough into 12 equal pieces; shape into balls. Place in greased 8-inch round pan. Cover; let rise in warm, draft-free place until doubled in size, about 30 minutes.
- Bake in preheated 375 degrees F oven for 20 minutes or until done. Remove from pan; brush with additional melted butter, if desired. Serve warm.

EASY QUICK BUNS
These are super easy, super quick buns. I get requests to take them everywhere we go. They are great for those last minute dinner guests, or a nice surprise for breakfast. They freeze well, and make excellent toast. This recipe is a combo of my grandmothers recipe and a few others, all tweaked to make a fast, easy, soft, fluffy bun.

Steps:
- Mix 2 C flour& yeast in a large bowl.
- In a separate bowl, heat milk, water, oil, sugar& salt to lukewarm in microwave.
- Add all at once to flour mixture and beat till smooth. (Approx 2 mins in a Kitchenaid stand mixer).
- Mix in enough flour to make a soft dough (2 - 2 1/2 Cups).
- Mix well until dough is soft and slightly sticky, then turn out onto floured surface and let rest under a large greased bowl for about 15 minutes.
- Shape dough into 12-15 small balls and place on greased baking sheet to rise until doubled in size. (approx 45 Mins).
- Bake in preheated 400 degree oven 12-15 minutes.

Steps:
- In a small bowl, combine 1/2 cup of warm milk with sugar and yeast.
- Let stand for about 10 minutes until frothy.
- In another bowl, combine the egg and remaining 1/2 cup of warm milk and the melted butter.
- In the bowl of a stand mixer with a dough hook, combine flour and salt.
- Add the yeast mixture and egg mixture to the flour.
- With the mixer on low speed, start mixing, then increase the speed as flour is incorporated.
- Continue to mix for another 2 minutes or until the dough comes together.
- Turn the dough out onto a lightly floured surface and knead for about 5 minutes, until the dough is smooth and elastic.
- Form dough into a ball and place into a lightly greased large bowl.
- Cover with plastic wrap.
- Leave overnight in the refrigerator or alternatley, let proof in a warm area until doubled in size for about 45 minutes.
- Punch dough down and turn out onto a very lightly floured surface.
- Tear off pieces of dough and form 14 to 16 - 1 1/2 inch balls.
- Roll them between your hands to make a smooth ball.
- Place the dough balls in a buttered 8" x 8" pan or an 8" round pan, so the dough balls are touching each other.
- Cover with plastic wrap and then with a damp cloth or towel and let rest in a warm area for about 40 minute or until doubled.
- Preheat oven to 350°F.
- In a small bowl, whisk together the egg and milk to make an egg wash.
- Using a pastry brush, generously coat the top of the dough buns with the egg wash.
- Bake in preheated 350 F oven for about 18 to 20 minutes or until the top is golden brown.
- Pull apart at the dinner table and serve with butter.

This easy yeast roll recipe was given to me by my Great, Great Grandmother. I used it a couple of years ago in our state fair and received first place.

Steps:
- In a large bowl, mix the shortening, sugar, and hot water. Allow to cool until lukewarm, and mix in the yeast until dissolved. Mix in the egg, salt, and flour. Allow the dough to rise until doubled in size.
- Grease 8 muffin cups. Divide the dough into the prepared muffin cups, and allow to rise again until doubled in size.
- Preheat oven to 425 degrees F (220 degrees C).
- Bake for 10 minutes in the preheated oven, or until a knife inserted in the center of a muffin comes out clean.

I made these one time to go with soup that we were having for dinner. I made the dough balls too big and/or let them rise too much and they ended up being huge, but they were good and they were easy to make.

- Mix warm water, oil, sugar and yeast; let rest for 10 minutes until yeast activates.
- Add salt and beaten egg; blend well.

- Combine the water, milk, butter, sugar, salt and yeast in a large bowl, or the bowl of your stand mixer. Stir well and let sit for 6 to 8 minutes, or until you see the yeast begin to foam.
- Add 5 cups (600g) of flour and mix by hand or with the paddle attachment until the dough forms a rough, shaggy mass. The dough will not form a ball at this point, but will be just shy of coming together.
- Add flour, 1/2 cup at a time and blend with the dough hook until a smooth ball begins to form. Knead by hand for about 10 minutes, or by machine for 4 to 5 minutes until a soft, smooth ball of dough is formed.
- Lightly spray your work bowl with cooking spray and place the dough in the bowl. Spritz the top of the dough with spray as well and cover lightly with plastic wrap or a shower cap.
- Gently deflate the dough and pat out to a rough rectangle about 8 inches by 12 inches. Cut the dough into 4 long strips, then cut each strip into 6 portions for a total of 24 dough balls.
- You can place the rolls into any of the following pans, well greased or lined with parchment paper: One half-sheet baking pan or 2 quarter-sheet pans.
- After the rolls are in the pans, cover again with your plastic wrap and let rise at room temperature for another 20 to 25 minutes, or until well rounded and full looking.
- Bake the rolls for 20 to 25 minutes or until golden brown and an internal thermometer reads 190°F. You can brush the baked rolls with melted butter if desired.
- If you want to freeze the unbaked buns, place in the pans as described in step 6 and allow to rise for 10 minutes. Wrap airtight and freeze for up to 4 weeks.
