Steps:
- Brown the chicken in oil and butter over moderate heat. Remove pieces and set aside.
- Lightly saute the onions in the same large skillet or pot.
- Stir in the curry powder, return chicken to the pot, and cook for 3-5 minutes, turning the pieces several times.
- Add the fruits, salt, vinegar and peanuts, with enough water to cover.
- Bring to a boil, reduce heat, cover and simmer until chicken is tender, about 45 minutes.
- If the sauce is too thin to ladle well over rice, cook uncovered another 15-20 minutes
- until the liquid is reduced.

- Wash the chicken and pat dry.
- Combine the yogurt, tomatoes, cinnamon, cardamom, cloves, peppercorns, cumin, chilies, saffron, turmeric, cayenne, ginger, garlic and salt.
- Pour mixture over the chicken, turning the pieces until they are well coated.
- While they marinate, in a large heavy skillet or stew pot, fry the onions gently in the butter and oil until light, golden brown. Let onions cool slightly and crush them with the back of a spoon.
- Add entire contents of the marinating bowl. Simmer until chicken is tender, adding small amounts of water as needed to keep the contents from sticking.
- Garnish with cilantro and mint and serve with rice or Indian bread.
CAPE MALAY CHICKEN CURRY WITH YELLOW RICE

- Heat the oil in a large, wide pan. Add the onion and fry for 5 mins until softened, stirring every now and then. Stir in the garlic, ginger and cloves, and cook for 5 mins more, stirring frequently to stop it sticking. Add all the remaining spices and the fresh chilli, stir briefly, then tip in the tomatoes with 2 cans of water, plus the chutney and crumbled stock cube.
- Add the chicken thighs, pushing them under the liquid, then cover the pan and leave to cook for 35 mins. Stir well, add the potatoes and cook uncovered for 15-20 mins more until they are tender. Stir in the coriander.
- About 10 mins before you want to serve, make the rice. Put the butter, rice, raisins, sugar and spices in a large pan with 550ml water and 0.5 tsp salt. Bring to the boil and, when the butter has melted, stir, cover and cook for 10 mins. Turn off the heat and leave undisturbed for 5 mins. Fluff up and serve with the curry.

- Preheat oven to 175 C/350°F.
- Chop the onion and the applie. In a large bowl, mix the milk and bread crumbs, and grease a shallow dish.
- Heat the oil in the pan and add curry powder, then add onions. Saute until onion is transparent, then add the chopped apple.
- Transfer onion/apple mixture to the breadcrumb mixture. Saute the beef until brown, then add that to the onion/breadcrumb mixture. Season with spices and the chopped almonds, pour into the oven dish.
- Mix eggs and milk and pour over the dish. Place the bay leaves are decoration. Bake for 40 - 50 minutes.
- Serve with potatoes and green salad.

- In a medium sauté pan, heat olive oil over medium heat. Cook the onions, stirring occasionally, until soft and caramelized, about 5-7 minutes.Stir in the curry powder and coriander,cooking for another minute to toast the spices.
- Drizzle in the honey, tamarind water and lemon juice. Bring to a boil and then take off the heat and set aside to cool completely.
- In a large bowl combine the lamb, apricots, peaches and rosemary sprigs. Pour the marinade over, folding to coat completely. Cover and marinate, refrigerated, for 4 hours or up to overnight.
- Soak 8 wooden skewers in warm water for 10 minutes. Remove the marinating lamb mixture from the refrigerator. Thread ingredients onto the skewers alternating between lamb, peach and apricot, repeating for three combinations on each skewer.
- Heat a large grill pan over medium high heat or preheat an outdoor grill. Grill kebabs for 15-20 minutes, about 3-5 minutes per side. Transfer to a platter, garnish with rosemary sprigs and serve with Basmati Rice with Pistachio Pesto.

- Peel the carrots and slice thinly.
- Cover the slices with water and boil just until soft then drain and set aside until needed.
- Peel and halve the onions and slice thinly then cover the onions with boiling water and leave to stand for 15 minutes, then drain the onions.
- In a large pot add the cooked carrots and onions, white vinegar, sugar, raisins, salt, cloves and black peppercorns and bring to a boil.
- Mix the corn flour and curry powder with 1/2 cup of water.
- Now add the curry mixture to the carrot mixture and let boil for 10 minutes, stirring occasionally.
- Spoon the hot curried carrots into clean hot jars and seal immediately.

- Heat oven to 180C/fan 160C/gas 4. Pour cold water over the bread and set aside to soak.
- Meanwhile, fry the onions in the butter, stirring regularly for 10 mins until they are soft and starting to colour. Add the garlic and beef and stir well, crushing the mince into fine grains until it changes colour. Stir in the curry paste, herbs, spices, chutney, sultanas and 2 of the bay leaves with 1 tsp salt and plenty of ground black pepper.
- Cover and simmer for 10 mins. Squeeze the water from the bread, then beat into the meat mixture until well blended. Tip into an oval ovenproof dish (23 x 33cm and about 5-6cm deep). Press the mixture down well and smooth the top. You can make this and chill 1 day ahead.
- For the topping, beat the milk and eggs with seasoning, then pour over the meat. Top with the remaining bay leaves and bake for 35-40 mins until the topping is set and starting to turn golden.
