QUINOA BREAKFAST CEREAL
Quinoa (pronounced Kin-wa) is an ancient grain that was a staple food of the ancient Incas of South America. This recipe is a cooked cereal somewhat like oatmeal, but even healthier! It is gluten-free and according to Bob's Red Mill (the brand of quinoa I used), is the most nutrious of all grains. The added flax meal is for boosting your omega-3s. I make this on the weekend, and then reheat a bowl in the microwave.

Steps:
- Heat water in a covered pot to boiling.
- Meanwhile, dice dried apricots and measure other ingredients.
- Add all remaining ingredients to boiling water, stir well and return to a boil.
- Cover and reduce to simmer for 12 minutes, or until all water has been absorbed, stirring once or twice in the middle.
- Remove from heat, fluff (like you would rice), cover and let stand for 10 minutes.
- Serve in a bowl with milk (or dairy free milk alternative like soy milk, rice milk or almond milk), and a drizzle of honey if desired.

Steps:
- Boil the water and add the quinoa flakes and a dash of salt (optional) and cook for 90 seconds, stirring frequently.
- Remove from the heat and allow it to cool and thicken slightly.
- Meanwhile, put the blueberries in a small saucepan and heat on low until thawed and warmed.
- Stir the nut butter into the cooked cereal and mix well until the nut butter is evenly dispersed and no clumps remain.
- Stir in the almond extract and the thawed blueberries (and resulting blueberry juice).

- First, toast the pecans before we add the remaining ingredients. To do so, warm the pecans in a small saucepan (use a larger saucepan if you are making multiple servings) over medium heat, shimmying the pan often, until the pecans smell fragrant and toasty, about 4 to 6 minutes.
- Add the coconut oil, cinnamon and salt to the pot. While stirring constantly, cook until the cinnamon is fragrant, about 15 seconds.
