RAINBOW POPCORN BALLS
The third grade teacher at my school would make these for her students. The many colors of jello make them appropriate for any holiday. Orange jello is great for Halloween; lime and cherry for Christmas time, etc. These are very yummy and never get hard. You will recognize the similarity to Rice Krispie Candy. I don't see why this recipe wouldn't work just as well with cereal as with popcorn, although I've never done it myself.

- In a large pot, melt butter, corn syrup, and sugar together over medium heat until boiling. Allow to boil for 2 minutes (or until the mixture reaches a soft ball stage), then remove pan from heat.
- Separate popcorn evenly into six bowls or large paper bags. (Note: A fast way to pop the popcorn is to place 1/2 cup of uncooked seeds into a large, brown grocery bag. Roll the top of the bag down several times, then microwave it for 3-4 minutes. 3-4 batches should be enough to yield the 20 cups needed for this recipe. Be sure all unpopped popcorn seeds have been removed by lifting the popped popcorn out of the bag, and into a large bowl with your hands. Don't just dump the bag into a bowl!)
- Working quickly, whisk 1/2-1 teaspoon of drink powder into 1/3 cup of the corn syrup mixture. Drizzle over each bowl of popcorn and toss until coated in color. Don't worry if the popcorn is completely coated with this sugary sauce. You're going to pour a final coat over everything before forming them into ball!
- Once all bowls of popcorn have been tinted with the colored drink and sugar mixtures, pour all the colored popcorn back into the pot, and toss with the remaining corn syrup mixture. The popcorn should now be very well coated with the sugar mixture.

- Begin by popping popcorn. You'll need 10 cups of popped popcorn (Amish popcorn is our hands-down favorite kind) which can be popped using an air popper or however you prefer. Preheat oven to 300 degrees Fahrenheit. Line a cookie sheet with parchment paper. Spread popcorn out on top of the parchment paper and set aside nearby.
- Grease a 2-quart saucepan with butter to prevent the mixture from sticking. Combine butter, sugar, package of Jello, corn syrup and water. Heat until it boils and then continue to boil for about 3-4 minutes or until a drop of hot mixture dropped into a cup of cold water forms a rigid ball. Pour mixture over popcorn and stir until evenly coated.
- Put popcorn pan into oven and bake 5 minutes. Stir and bake an additional 5 minutes. Remove from oven and spread on top of parchment paper to cool. Once it cools, break into clusters. Repeat for each color of the rainbow.
- TO MAKE POPCORN BALLS: Follow directions until you spread mixture to cool. Allow to cool until you are able to handle them with your hands. Grease hands and form popcorn into balls. Allow to cool completely once formed into balls.
