APPLESAUCE ENERGY BARS

Not overly sweet, chewy, and moist these are really good! The sweetness comes from the applesauce, honey and raisins. Great for a quick light snack. Toasting the oats with the butter on the stove top just adds to the great flavor. Yum!

Applesauce Energy Bars image

Steps:

  • 1. Stir raisins, applesauce and vanilla; set aside.
  • 2. Melt butter in pan over medium heat and add oatmeal and nuts stirring constantly; 3-4 minutes.
  • 3. Stir in cinnamon and salt; cook 1 minute.
  • 4. Pour mixture from pan into a bowl.
  • 5. Stir eggs and honey into raisin mixture.
  • 6. Pour wet ingredients into dry ingredients. Spread into 8x8 buttered pan and bake 30 minutes at 350 degrees.

1/4 c butter
1 c raisins
1/4 c applesauce
2 tsp vanilla extract
2 1/4 c oatmeal, uncooked
1 c chopped nuts
2 tsp cinnamon
1/2 tsp salt
2 eggs, beaten
1/3 c honey

Raisin Cinnamon Bars image

Steps:

  • In a large bowl, combine butter and brown sugar until crumbly, about 2 minutes. Beat in egg. Gradually beat in coffee. Combine the flour, baking powder, cinnamon, baking soda and salt. Gradually add to the coffee mixture until blended. Stir in raisins and pecans., Transfer to a 13x9-in. baking pan coated with cooking spray. Bake at 350° for 18-20 minutes or until edges begin to pull away from the sides of the pan and a toothpick inserted in the center comes out clean. Cool on a wire rack for 5 minutes., Meanwhile for icing, in a small bowl, combine the confectioners' sugar, vanilla and enough water to achieve spreading consistency. Spread over warm bars.

Steps:

  • Preheat oven to 350 degrees. Butter a 10-by-15-inch rimmed baking sheet. Line bottom with parchment paper, and butter parchment; set sheet aside.
  • Make filling: Pulse raisins and sugar in a food processor until almost pureed. Transfer to a saucepan. Whisk cornstarch into 1 cup cold water; whisk into raisin mixture. Stir in cider. Simmer over medium-low heat, stirring occasionally, until mixture thickens and sugar has dissolved, about 6 minutes.Let cool completely.
  • Make dough: Whisk together flour, baking soda, and salt in a medium bowl; set aside. Put shortening in the bowl of an electric mixer fitted with the paddle attachment. Mix on medium speed until smooth. Add brown sugar, and mix until pale and fluffy, 2 to 3 minutes. Add egg and vanilla, and mix until combined. Reduce speed to low. Add flour mixture; mix until just combined. Mix in oats.
  • Press half the dough into prepared baking sheet. Spread raisin filling evenly over top of dough. Crumble remaining dough on top of filling using your fingers, gently pressing down so that topping covers filling. Bake, rotating sheet halfway through, until top is golden brown, about 35 minutes. Let cool completely in sheet on a wire rack. Cut into 2-inchsquares. Bars can be stored between layers of parchment in airtight containers at room temperature up to 5 days.

  • Coat generously a 13x9 inch baking pan with nonstick cooking spry. Turn raisin mixture into pan. Pat to even layer.
  • Bake at 300°F for 20-25 minutes or until edges are golden brown. Cool 5 minutes in pan. Loosen edges with spatula and invert onto wire rack to cool completely. If granola is in large clusters, place in plastic bad and crush before measuring.

Steps:

  • Preheat oven to 350°. Line a 13x9-in. baking pan with foil, letting ends extend up sides; grease foil. In a large bowl, combine the first 7 ingredients. RAISIN ENERGY BARS

Recipes for Healthier Eating. I just made these (8/28) and used Kashi GoLean Crunch as the 'granola cereal' and they did not work at all. Also, I tried a 9x13 baking dish, but had to do a 7x11 in order to get them to fit. I baked for 23 minutes, but probably needed closer to 30. The top looks great, but the bottom is barely cooked. I recommend either a) use real granola cereal, or b) don't make these :) Good luck!

  • Add the dates, sea salt and cinnamon, if using and process into a thick, sticky, clumpy dough you can easily press between your fingers. If it’s not turning into clumpy dough, add 1 tsp warm water and process again. That should be enough but you may need to repeat 1-2 times if your dates were on the dry side.
  • Line a 7-8 inch square baking pan with parchment paper so it sticks out over the sides of the pan then firmly press the dough into the pan, really working it into the corners. Once you’ve pressed the dough down, I recommend wetting your hands and using them to smooth the surface of the bars.
