SPINACH AND CHEESE STUFFED CHICKEN BREAST #RSC

Ready, Set, Cook! Hidden Valley Contest Entry. I love creating my own recipes and menus for people. I have been doing this since I was about 12 years old. I put together a birthday party with lots of freshly prepared food and cake that I prepared for my mom. I had help from my cousins and friends who were my assistants and servers. The party was a great success and I have been doing this ever since. I made this chicken dish 8 years ago and it was the only thing different my mom would eat so I made sure I perfected the dish just for her and of course others. I usually brine my chicken in a mixture of salt, brown sugar and water for at least 45 minutes

Spinach and Cheese Stuffed Chicken Breast #RSC image

Steps:

  • Butterfly chicken breast and drizzle with olive oil.
  • Sprinkle chicken breast with Hidden Valley Seasoning and Dressing Mix and set aside.
  • In a saute' pan cook spinach until spinach has started to cook down. Remove spinach from heat and add to a medium bowl with Parmesan cheese, half of the mozzarella cheese, bread crumbs and beaten egg and olives. Mix all ingredients until well incorporated.
  • Place a large spoonful of spinach mixture in the middle of each chicken breast and fold over, covering the spinach mixture completely.
  • Sprinkle with remaining cheese and place on baking sheet and bake on 350 degrees for 20-25 minutes or until thermometer reaches 165 degrees when chicken is tested.

Ready, Set, Cook! Hidden Valley Contest Entry. This is a lovely makeover of a tried-and-true recipe I've used for all of my married life (almost 10 years). With the ranch flavoring, it dresses it up and makes it a great recipe for weekends or a special company meal. I love it because the prep time is very low. I can pop it in the oven and pull out a meal that looks and tastes like it took me hours to prepare. Over a bed of rice with a side salad or green vegetable, it makes an attractive display.

Ranch Mozzarella Chicken #RSC image

Steps:

  • Set oven for 350 degrees Fahrenheit.
  • Mix together bread crumbs, parmesan cheese and Ranch mix in a small bowl.
  • In another small bowl, beat two eggs with a fork.
  • Dip the chicken breasts first in the beaten eggs, and then in the bread crumb mixture. Lay them in a casserole dish.
  • Scatter the shallots over the chicken breasts.
  • Place the mozzarella slices over the shallots, completely covering all the chicken in the dish.
  • Spread Ranch dressing from the bottle over the mozzarella. Use a knife to smooth it out so that a thin layer of the dressing covers all the cheese.
  • Put the chicken in the oven and bake it for 1 hour but check it at 45 minutes. The cheese should be golden brown and the chicken tender and delicious.

Florentine Ranch Chicken Pizza Rolls #RSC image

Steps:

  • Pre Heat Oven to 400 degrees.
  • Place baby spinach in glass bowl, cover with paper towel and microwave for 2-3 minutes until spinach is wilted. Set aside to cool.
  • Line a 10 inch spring form pan (or similar sized pan) with parchment paper and lightly oil. Roll pizza dough out into a ¼ inch thick rectangle and cut into 20 equal squares.
  • In a food processor fitted with the chopping blade combine Greek yogurt and Hidden Valley Ranch seasoning mix packet, process until combined. Strain spinach and squeeze out excess water. Add the spinach, 1/3 cup of parmesan, Italian cheese blend, sundried tomatoes and chicken to food processor. Pulse several times (stopping to remove lid and scrape down sides as needed) until chicken mixture is coarsely chopped and the consistency of chicken salad. *Do not over process.
  • Using a standard size cookie scoop, add a rounded spoonful of chicken mixture onto the center of each dough piece. Pull the dough around the filling, pinching to make sure each ball is sealed and place seam side down touching in pan. Cover pan and allow dough to rise for 30 minutes. (If using canned pizza dough no proofing is needed.)Brush dough with olive oil. Bake for 20 minutes.
  • Combine 3 tablespoons Parmesan and 1 teaspoons Hidden Valley Ranch seasoning mix.
  • Brush rolls with butter and sprinkle with parmesan ranch mixture bake 5 additional minutes or until rolls are lightly brown.

Steps:

  • Remove dough from refrigerator. Let stand at room temperature 20 minutes.
  • Preheat oven to 450°F.
  • In a small bowl, combine Hidden Valley Ranch Dressing and Alfredo sauce. Set aside.
  • Heat vegetable oil in medium nonstick skillet over medium heat. Add shallots and cook, stirring frequently, 8 minutes or until soft and caramelized. If shallots begin to brown too quickly, add water 1 Tablespoon at a time, stirring until water evaporates. Add spinach to skillet with shallots and sauté 2 minutes or until spinach wilts. Remove from heat.
  • In a medium bowl, combine chicken breast, lemon juice, and the shallot-spinach mixture. Season with salt and pepper.
  • On a floured work surface, roll out pizza dough into a 13-inch round. Transfer dough to a pizza pan. Spread Ranch-Alfredo sauce evenly over crust. Top with mozzarella and chicken mixture. Sprinkle evenly with Parmesan cheese. Bake pizza 15 minutes or until crust is browned and crisped on the bottom and the cheese is melted.

Hidden Valley Ranch White Pizza With Spinach and Chicken #RSC image

Steps:

  • Sautee diced chicken chunks in a pan, set aside.
  • Prepare pizza dough mix according to directions on the box. Brush dough with olive oil.
  • In a separate bowl, mix Greek yogurt and packet of Hidden Valley Ranch Seasoning Mix. Spread on pizza dough according to how much sauce you like on your pizza. You can use any leftover sauce for dipping!
  • Spread parmesan cheese over pizza.
  • Spread spinach over cheese.
  • Place tomatoes on pizza. As many or as little as you like, or none at all.
  • Sprinkle cooked chicken on top of all the other toppings.
  • Cook according to temperature and time on the pizza dough box, or until browned.
  • Remove pizza from oven and allow to cool for 5 - 10 minutes.
  • Sprinkle with lemon zest, optional.
  • Cut into 6 or more slices, depending on size.
  • Serve and enjoy!

Steps:

  • Cut the mozzarella into sticks about 3 inches long and 3/4 inch thick.
  • Line a rimmed baking sheet with parchment paper. Place three shallow bowls on a work surface. Place the flour in one bowl. In another bowl, whisk eggs and buttermilk together. In a third bowl, combine the ranch seasoning with panko, parsley, dill and oregano.
  • Working one at a time, dredge a piece of mozzarella in flour. Dip in the egg mixture, let any extra drip off and then roll in panko mixture, pressing gently to coat well.   • Preheat oven to 350 degrees. Lightly coat 8" or 9" square baking dish with cooking spray.
  • FILLING:.
  • Thinly slice celery and coarsely chop onion. In 12" skillet, melt 3 T butter and sauté 2 minutes. Pour into medium sized mixing bowl. In the same skillet, heat olive oil; add chicken breasts cut into ¾" cubes and 1 tablespoon of seasoning mix. Stir well and sauté just until chicken is no longer pink.
