Steps:
- Heat oven to 400°F.
- Cook beef in 10-inch skillet over medium heat 8 to 10 minutes, stirring occasionally, until brown; drain. Stir together Potatoes, Sauce Mix, boiling water and milk in ungreased 2-quart casserole. Stir in beef and 1/2 cup of the cheese.
- Bake uncovered about 30 minutes or until top is light golden brown. Sprinkle chips over casserole; sprinkle remaining cheese over chips. Bake 5 minutes longer or until cheese is melted. Let stand 2 minutes before serving.

- Preheat to 350°F.
- In a sauce pan, on medium heat, melt butter, stir in flour, and add the mile gradually, stirring constantly, until thickened.
- Remove from heat, and stir in salt, pepper, onions, and barbecue sauce, stir in cheese until melted.
- Place a layer of half the potato slices in a 8x8 casserole dish. Pour half the sauce over the potatoes. Repeat.
- Bake for 25 minutes.

- Preheat the oven to 375 degrees F.
- Butter a 12-inch cast-iron skillet. Arrange half of the potatoes in the skillet. Sprinkle with salt and pepper, half the chives, and half of each of the Gruyère, Cheddar and fontina cheeses. Repeat the layers once.
- Heat the cream, garlic, nutmeg, 1/2 teaspoon salt and 1/2 teaspoon pepper in a medium saucepan over medium heat until bubbles form around the edges, about 3 minutes. Remove from the heat and stir in the sour cream. Pour the cream mixture over the potatoes in the skillet. Cover tightly with aluminum foil. Bake until the potatoes can be easily pierced with a knife, about 45 minutes.
- Uncover and bake until the cheese is browned and the edges are bubbly, about 15 minutes. Broil for 2 minutes, if desired. Remove the skillet from the oven and sprinkle with more chives before serving.

- Boil the potatoes until they may just be pierced with a cooking fork yet still offer some resistance. Peel and cut into cubes. Heat the oil in a heavy skillet and sauté the onion, garlic, chilies and pepper until just beginning to brown. Add the diced potatoes and continue to sauté until the potatoes are nicely browned on all sides. Season with salt pepper and chili powder.
