CLASSIC CORNBREAD

Matt and Amy Bell, owners of the restaurant South on Main, usually avoid cooking contests. But the cornbread festival was different. "It's more of a community project than a competition," Matt says. "And it's directly outside the restaurant." The pair won the traditional category with their classic cornbread, a recipe developed by Amy's grandmother Nellie Mae. "You don't dare mess with family recipes," Matt says. "And if you do, you better make sure they can't tell."

Classic Cornbread image

Steps:

  • Preheat the oven to 400 degrees F and brush a 9-by-13-inch baking dish with vegetable oil.
  • Whisk the cornmeal, flour, sugar, baking powder and salt in a large bowl. In another bowl, whisk the egg, vegetable oil and buttermilk, then fold into the dry ingredients with a rubber spatula until just combined.
  • Transfer the batter to the prepared baking dish and bake until a toothpick inserted into the center comes out clean, 10 to 12 minutes. Transfer to a rack and let cool 15 minutes before serving.

1 cup yellow cornmeal
1 cup all-purpose flour
2/3 cup sugar
3 1/2 teaspoons baking powder
1/2 teaspoon salt
1 large egg
1 cup buttermilk

Steps:

  • Mix scallions, garlic, paprika, salt, and pepper together.
  • In a saute pan, melt butter. When butter is melted, add saute scallion mixture.
  • In a separate bowl, coat the scallops with bread crumbs. Add the coated scallops to the saute mixture. Stir and cook for about 2 to 4 minutes, until golden brown.

2 bunches scallions, minced
2 cloves garlic, minced
Paprika
Pinch salt
Pinch pepper
4 ounces (1 stick) butter
2 pounds scallops
Seasoned bread crumbs, to coat

RANDALL'S ORDINARY CORNBREAD

This is a little different than your typical cornbread. It is very moist and so delicious!It is from a small restaurant in Rhode Island that was built in the 1700's. Food is still cooked over a wood fire in the original fireplace.

  • Cream eggs and sugar.
  • Add salt, milk and oil; Mix well.
  • Slowly add cornmeal to mix;.
  • Slowly add flour and baking powder; Mix well to incorporate all ingredients.
  • IMPORTANT: Let mix stand for 24 hours in refrigerator before baking.
  • Pour into 9-inch pie plate.
  • Bake in 300 degree oven for 25-30 minutes.

Chunky Chile Cornbread image

Steps:

  • 1. Beat together sour cream, milk, egg whites and oil.
  • 2. Combine in separate bowl, brown sugar, flour, cornmeal, baking powder and salt.
  • 3. Drain corn and green chiles.
  • 4. Combine wet ingredients with the dry ingredients and fold in corn and green chiles.
  • 5. Transfer into a greased 8 X 8 baking pan.
  • 6. Bake for 30-35 minutes at 350 degree. Make sure you let the cornbread rest for 10 minutes before enjoying.
