Steps:

  • Mix all ingredients, marinate 1 to 2 pounds of unsliced skirt steak 8 hours in marinade before grilling it along with colored bell peppers, poblano chiles, and white onion halves. Let meat rest several minutes before slicing thinly against the grain. Serve sliced meat and vegetables on warm flour tortillas with sides of salsa, guacamole, pinto beans, and Recipe #461278.
  • Alton Brown's homemade chili powder: We substitute ground chipotle for the smoked paprika in that recipe. Recipe #225751.

2 ounces silver tequila, the cheap stuff
2 tablespoons olive oil
2 limes, juice of
1 -2 serrano chili, minced
4 garlic cloves, minced
1/2 small white onion, minced
2 tablespoons alton brown's homemade chili powder, below
1/2 teaspoon salt

This marinade is loosely based on the salmon I had at Longhorn Steak House. It is absolutely the best marinade I have found for salmon.

Steps:

  • Whisk marinade ingedients in small bowl --
  • just use the juice from lemon and lime.sometimes I get a little zest from each one and include that as well --
  • Pour some over chicken in resealable bag.marinate 1-2 hours or overnight.
  • I put some marinade in a squeeze bottle for easy basting.

This is best if used on seafood, such as cod, haddock salmon or shrimp. If using shrimp, I recommend nothing smaller than 16-20 count. Marinade time is NOT cooking time. Adjust the marinade time to your liking.

Steps:

  • Mix everything well in a blender or with an electric hand mixer.
  • Marinade fish in a plastic ziplock bag for 4 hours, turning every hour, if possible -- shrimp for 1 hour.
  • Drain, reserving the marinade.
  • Grill or broil fish/shrimp as desired, basting with the marinade.
