RASPBERRY BALSAMIC VINAIGRETTE DRESSING
Sick and tired of trying bottle after bottle of dressing, and not finding anything that came even close to my favorite restaurant-inspired salad, this recipe allows me to have simple, delicious salad anytime, with only a few simple ingredients. Tastes amazing on salad with fruit (apples are my favorite), or even as a bread dip!

Steps:
- Combine oil, raspberry balsamic vinegar, balsamic vinegar, brown sugar, mustard, and garlic in a sealable jar. Seal the jar and shake vigorously until dressing is well-combined. Refrigerate until flavors combine, at least 1 hour.

BALSAMIC STRAWBERRIES WITH WHIPPED MASCARPONE CHEESE

Steps:
- Combine vinegar, 2 teaspoons sugar, and lemon juice in heavy small saucepan. Stir over medium heat until sugar dissolves. Boil until syrup is reduced to scant 1/4 cup, about 3 minutes. Transfer to small bowl; cool completely. (Can be made 2 days ahead. Cover and refrigerate.)
- Combine mascarpone, cream, vanilla, and 2 tablespoons sugar in medium bowl. Whisk until thick soft peaks form. Cover and refrigerate up to 4 hours.
- Combine berries and remaining 2 tablespoons sugar in large bowl; drizzle with balsamic syrup and toss to blend. Let stand 30 minutes, stirring occasionally.
- Divide berries and syrup among 6 goblets. Top with mascarpone mixture.
- *Italian cream cheese, available at Italian markets and many supermarkets.

- Divide berries among six individual dessert dishes (this looks great in wine glasses).
- Sprinkle each serving with 1 teaspoon of the balsamic vinegar.
- Stir together the mascarpone cheese and milk.
- Spoon mascarpone mixture over berries.
- Drizzle 1 teaspoon honey over each serving.

My neighbor brought this over one evening for my husband and I to sample. We just happened to be entertaining some guests, and hadn't planned a dessert. When the meal ended, I brought out the two portions and divided it carefully amongst the group. We practically licked our bowls clean, this was so wonderful. He had pulled the recipe from epicurious. Makes a beautiful presentation, very simple, very good. just be certain to use a good-quality balsamic.

- Put your mascarpone in a bowl and ad a little bit of sugar. It doesn't need a lot but ad whatever you think it sweet enough.
- If you like it you can add a bit of lemonzest and/or lemonjuice as well to break a bit of the fattiness of the mascarpone.
- Find a pretty glass to serve the dessert in. I used a wide whiskey glass. Having the width helps in putting the ingredients in.. ;)
- Put the ladyfingers in the bottom of the glass and break them where needed so you have a layer of sorts
