CRANBERRY MOLD

- Empty a 12-ounce bag of fresh or frozen cranberries into a saucepan and transfer 1/2 cup to a small bowl. Add 1 cup sugar, 1 strip orange or lemon zest and 2 tablespoons water to the pan and cook over low heat, stirring occasionally, until the sugar dissolves and the cranberries are soft, about 10 minutes. Increase the heat to medium and cook until the cranberries burst, about 12 minutes. Reduce the heat to low and stir in the reserved cranberries. Add sugar, salt and pepper to taste. Let cool.
- Heat 1/2 cup cranberry juice over low heat, then stir in a 1/4-ounce packet gelatin. Puree cooled cranberry sauce with another 1/2 cup cranberry juice, then add the gelatin mixture. Pour into a mold or empty soup cans and refrigerate overnight. Serve with whipped cream.

- Sprinkle unflavored gelatin over 1 tablespoon cold water; let stand 1 minute. Add boiling water and raspberry gelatin; stir until gelatin is dissolved, about 2 minutes. Stir in remaining cold water. Refrigerate until thickened, about 45 minutes., Pulse 2-1/3 cups cranberries, apples and orange in a food processor until chopped. Transfer to a small bowl; stir in sugar. Stir fruit mixture into thickened gelatin. Fold in walnuts, celery and remaining whole cranberries., Coat a 10-in. fluted tube pan, an 8-cup ring mold or two 4-cup molds with cooking spray; pour in gelatin mixture. Cover and refrigerate overnight or until firm. Unmold onto a platter.

- Add enough water to reserved mandarin orange juice to measure 1 1/4 cups. In 1-quart saucepan, heat juice mixture to boiling.
- Place gelatin in medium bowl. Pour boiling mixture on gelatin; stir until gelatin is dissolved. Stir in cranberry sauce until sauce is melted. Stir in orange segments. Pour into 4-cup mold.
- Refrigerate about 4 hours or until firm; unmold. Serve on salad greens.

Steps:
- Dissolve the Jello in the hot water, stirring briskly.
- Add the remaining ingredients and stir until they are thoroughly mixed.
- Pour into a mold and refrigerate overnight or until set.
- To unmold, run a sharp knife that has been heated in very hot water along the edges of the mold.
- Then, place the mold VERY BRIEFLY into a container of hot water, and then remove.
- Place serving platter inverted over mold (hold it tightly together), and invert.
- If you wish to (well before serving mold), have some extra fresh cranberries, dip them in raw egg whites, then dip them in granulated sugar, and allow to dry; do the same with slices of oranges.
- When you serve mold, garnish with pieces of kale of colorful lettuces and the sugared fruits.

RASPBERRY ORANGE MOLD
My mom used to make this fruit, jello, and ice cream mold every special dinner when I was growing up. I'd forgotten about it, but I just stumbled upon it again. Had to whip some up. Mmmmmm--or maybe it is just nostalgia---you'll have to tell me. Cook time is chill time, and can probably be reduced. The instructions have been revised based on Kittencal's review.

Steps:
- Prepare jello according to package directions, but only use 1 cup cold water so that it will gel thickly. Gel until firm in the refrigerator.
- Place jello into blender with ice cream (can use up to 4 cups of ice cream), and blend well until mixture is a creamy bright pink.
- Pour mixture into bowl and fold in drained fruit.
- Pour into mold and re-gel; that is, pour into jello mold and refrigerate until set and firm.
- Unmold and serve.

RASPBERRY-ORANGE FRUIT POPS RECIPE | MYRECIPES

- In a blender, whirl 3 cups rinsed, drained raspberries until smooth. Push through a fine strainer into a 1-quart glass measure; discard seeds. Add 2/3 cup orange juice and 3 to 4 tablespoons sugar (to taste) to berry purée; stir until sugar is dissolved.
- Pour fruit mixture into 6 to 8 juice bar molds (see notes). Attach covers firmly and insert sticks, leaving 1 1/2 to 2 inches of each sticking out. Set molds in freezer, making sure they're level and upright, and freeze until firm, at least 3 hours, or up to 2 weeks.
- To unmold, run warm water over the molds up to the rim, just until pops are released from sides, 5 to 15 seconds. Remove the covers and pull out the pops.
- Layered Pops: To create two-tone pops, make two different recipes and use twice as many molds. Pour one mixture into all the molds and freeze until firm to the touch on top, about 45 minutes, then pour the second mixture over the first, and freeze completely.
