- Combine all ingredients in a jar with a tight-fitting lid; shake well. Store in the refrigerator. Just before serving, shake dressing again.

- For the raspberry vinaigrette:
- Add the vinegar to a blender, replace the lid, turn it on, and through the feed opening, add, 1 at a time, the shallot, black pepper, salt, mustard, and thyme. Then leaving the blender running, add the olive oil in a slow thin stream.
- Wash and dry the blender to have it ready to prepare the other dressing.
- For the creamy Italian dressing:
- Add the vinegar to a blender, replace the lid, turn it on, and through the feed opening, add, 1 at a time, the garlic, black pepper, salt, red pepper, and Parmesan. Then leaving the blender running, add the olive oil in a slow thin stream.
- For the salad, toss the lettuce, red onion, sweet onion, tomatoes, Parmesan, and parsley together in a large bowl. Top with croutons, and serve the dressings on the side.
RASPBERRY-THYME VINAIGRETTE
I poured this dressing on steamed green beans and they were out of this world. The raspberries add a wonderful flavor. Another great recipe from the Fine Cooking repertoire.

- In small bowl, whisk together the white-wine vinegar, balsamic vinegar, thyme, mustard, salt, and pepper.
- Add the raspberries and crush them to a rough purée with a spoon or your whisk.
- Slowly whisk in the oil until the dressing is creamy and blended.
- Taste and adjust seasonings.

RASPBERRY VINAIGRETTE

Steps:
- Using a wooden spoon, push raspberries through a handheld wire strainer to puree.
- In a medium bowl, whisk together 2 tablespoons raspberry puree, lemon juice, vinegar, and sugar.
- In a slow but steady stream, whisk in olive oil until emulsified. Season with salt and pepper. Vinaigrette can be made 1 day in advance and stored in an airtight container in the refrigerator.

Steps:
- depending on the sweetness of the raspberries (frozen tend to be sweeter than fresh) you may need to adjust the amount of sugar to taste.
- In a one quart saucepan, combine vinegar, raspberries and shallot.
- Crush raspberries with a fork.
- Bring mixture to a boil and then reduce heat to a simmer.
- Cook for 5 mins or until mixture is reduced to approx 1/2 a cup.
- Strain mixture through a sieve into a blender.
- Process until smooth.
- Allow to cool.
- Add honey, sugar, lemon juice, mustard, dried thyme, salt, black pepper and water.
- Blend until smooth.
- Scrape down sides with a spatula and blend briefly to ensure that everything is well mixed.
- While blender is running, slowly drizzle half the canola oil in a steady stream.
- Stop the blender and scrape down the sides again.
- Turn the blender back on and slowly drizzle the remaining oil inches.
- Process until emulsified.
FRESH RASPBERRY BALSAMIC VINAIGRETTE
Super quick and easy salad dressing to use up those extra berries. I'm sure this would be tasty with other berries too.

- Mix raspberries and sugar together in a bowl; set aside until mixture is juicy, about 10 minutes. Mash berries using a fork until liquefied. Pour berry mixture into a jar with a lid; add balsamic vinegar, olive oil, honey, and salt. Cover jar with lid and shake until dressing is mixed well. Store in refrigerator.
