- Cook ravioli as directed on package; drain.
- Meanwhile, in 8-inch nonstick skillet, cover and cook onion over medium heat 3 to 5 minutes, stirring occasionally, until crisp-tender. Uncover; stir in tomatoes and olives. Cook uncovered 3 to 5 minutes, stirring frequently, until thoroughly heated.
- Gently stir in cooked ravioli. Cook 3 to 5 minutes, stirring occasionally, until sauce is desired consistency. Sprinkle individual servings with cheese and basil.

- Preparation 1 In a large bowl, toss tomatoes with 2 Tablespoons olive oil, garlic, salt and pepper.2 Grill tomatoes over medium-high heat for 2-3 minutes per side, then transfer to a clean bowl and allow to cool slightly.3 When tomatoes are cool enough to handle, peel away charred skin and discard.4 Set aside tomatoes.
- Heat remaining olive oil in a medium-sized saucepan over medium-low heat.5 Add onions and cook, stirring occasionally, for 10 minutes until tender.6 Stir in California Ripe Olives, white wine, capers, tarragon and tomato paste.7 Mix in grilled tomatoes and bring to a boil.8 Cover, turn heat to low and simmer for 15-20 minutes, stirring occasionally to break down tomatoes.9 Remove from heat and toss with cheese ravioli just before serving.

- Make a well in the middle then crack the eggs into the well, one at a time. Using your fingertips, mix well and begin to knead the fresh mixture into fresh dough.
- Put the dough on a table and knead well with both hands until the dough is smooth and elastic, rolling it out using a rolling pin if needed.
- Now for your filling; mix the ricotta, mozzarella, fresh tomatoes, olives and parmesan, adding the pinch of oregano, plus a sprinkle of salt and pepper.
- For the sauce: inside a mixer put the ingredients in the following order: basil, extra virgin oil, parmesan, garlic, and add a pinch of salt. Mix all until the ingredients turn into a creamy and minced sauce.
- Now for the ravioli; carefully fold each pasta square diagonally and pinch the edges until closed. Then bring the corners together with your fingers and squeeze together.
- Cook the ravioli in a large saucepan of lightly salted boiling water and simmer gently for four minutes, avoiding overcooking.
