GREEN BEANS GREMOLATA
Steps:
- Bring a large pot of water to a boil. Add the green beans and blanch them for 2 to 3 minutes, until tender but still crisp. Drain the beans in a colander and immediately put them into a bowl of ice water to stop the cooking and preserve their bright green color.
- For the gremolata, toss the garlic, lemon zest, parsley, parmesan, and pine nuts in a small bowl and set aside.
- When ready to serve, heat the olive oil in a large saute pan over medium-high heat. Drain the beans and pat them dry. Add the beans to the pan and saute, turning frequently, for 2 minutes, until coated with olive oil and heated through. Off the heat, add the gremolata and toss well. Sprinkle with 3/4 teaspoon salt and 1/4 teaspoon pepper and serve hot.

- Saute' first 4 ingredients in hot oil in a dutch oven over medium-high heat 5-10 minutes or until tender.
- Add tomatoes and cook, stirring occasionally, 5 minutes. Add beans and next 4 ingredients. Bring to a boil. Cover, reduce heat, and simmer, stirring occasionally, at least 30 minutes.
- Remove and discard thyme sprigs and bay leaf. Stir in salt and pepper to taste and hot sauce, if desired. Top each serving with a spoonful of Gremolata.

- Process all ingredients in a food processor or blender until well blended or to desired consistency, stopping to scrape down sides.

- In a large shallow pan, fry the onion and garlic in the olive oil on a low heat for 8 mins; do not brown. Roughly chop the tomatoes and add along with the sugar, vinegar, 750ml water and seasoning. Bring to the boil and simmer for 35 mins, stirring from time to time.
- Whizz with a hand-held blender until smooth. For an ultra-smooth, dinner party-style soup, you can pass the liquid through a fine sieve, but this is quite fiddly and your blender will give perfectly good results.
- For the gremolata, mix together the lemon zest, juice, olive oil, garlic and parsley, then serve on top of the soup.

- First, rinse the beans under cold water. Then, soak the beans in water for at least 8 hours (overnight).
