Steps:

  • To make the paste, grind and mash all the ingredients together in a mortar until a thick, red paste is formed.
  • To make the curry, first heat the wok until very hot and add the coconut cream until it begins to boil. Then, add the chicken and curry paste and fry together for a few minutes. Next, add the coconut milk, fish sauce and baby eggplant along with the fresh chilies and simmer for 10 minutes. Remove from the heat and serve with steamed rice.

4 tablespoons chopped garlic
3 tablespoons chopped shallots
2 tablespoons fresh galangal
2 tablespoons fresh ginger
Rind of 1 kaffir lime (substitute regular lime zest or kaffir lime leaf)
2 tablespoons ground dried red chilies
Fish sauce, to taste
2 tablespoons roughly chopped holy basil leaves (if unavailable, sweet basil can be used)
1 cup coconut cream
3 boneless chicken breasts, sliced into small chunks
2 cups coconut milk
2 tablespoons fish sauce
1 cup chopped baby eggplant
1 Thai red chili, stemmed, seeded, and thinly sliced
Steamed rice, for serving

RED CURRY STEAMED CHICKEN OR FISH

You can use either chicken or fish for this, or equally veggies like courgette, mushrooms etc as a pretty side dish. This makes a fantastic starter to an Asian themed dinner. You'll also need 4 individual bowls for steaming, or foil bowls, or banana leaf cups.

Steps:

  • Put coconut cream & rice flour into a small pot and bring to a boil. Set aside (don't allow this to get cold though).
  • In a large bowl, put the egg, chicken (fish or veges, if using), red curry paste, soy & oyster sauces and palm sugar, and mix until well combined.
  • Put the cabbage and then the basil leaves (5 per serving) into the bottom of each little bowl.
  • Divide the chicken (fish or veges) mixture evenly between the 4 bowls (they will be quite full, but don't worry, as the cabbage & chicken cooks this will shrink down), top with the lime peel and steam for 15 minutes (or until chicken is cooked).
  • Top with the thickened coconut cream recipe and steam for a further minute. Garnish with finely sliced red chili if desired.

  • Heat a large skillet or wok over high. Add oil and curry paste and cook, stirring, until fragrant, about 1 minute. Add chicken and cook until starting to brown, about 1 minute. Kua Kling (Southern Thai-Style Red Curry) image

Steps:

  • In a nonstick skillet over medium-low heat, warm the oil and toast the curry paste, turmeric and chiles (if using) until extremely fragrant, 2 to 3 minutes. Stir and lower heat as needed to prevent sticking.
  • Add the chicken and cook, breaking the meat up with a spoon. Stir to coat the meat in the curry paste and to prevent sticking, and cook until the chicken is opaque, 7 to 10 minutes. If everything is sticking, don't panic - just add a little water or neutral oil.
