RED-EYE BARBECUE SAUCE
I made this recipe for an assignment in culinary school-my first time making barbecue sauce. I have to say, it was the best barbecue sauce I had in a long time! The hint of coffee livens up the sweet barbecue sauce perfectly. -Evan Haut, Canton, Ohio

Steps:
- In a Dutch oven, heat butter over medium heat. Add garlic and shallot; cook and stir until softened, 5-7 minutes. Add brown sugar. Reduce heat to medium-low; cook, stirring occasionally, until deep golden brown, 15-17 minutes., Add remaining ingredients; simmer 10 minutes. Remove from heat. Puree sauce using an immersion blender or cool slightly and puree in batches in a blender. Strain through a fine-mesh strainer. Return to pan; cook and stir until liquid is reduced by a third, 30-40 minutes., Refrigerate, covered, until serving. Serve with grilled meats.

Round steak simmered in ketchup and onions makes a great gravy to spoon over mashed potatoes. This was a family favorite when I was a kid.

- Combine the flour and salt in a bowl. Gently press the steak into the flour mixture to coat and shake off the excess flour.
- Heat the vegetable oil in a large skillet over medium-high heat. Cook the beef until brown on all sides, 5 to 7 minutes. Remove beef from skillet and drain excess oil. Stir the ketchup, onion, and water into the skillet, then add the meat. Reduce heat to medium-low. Cover and simmer until tender, about 1 hour.

This is great served with meats, potatoes, whatever you want! Served in camps in the early West, it's so good, it's still used!

- Cook and stir over medium heat until coffee crystals are dissolved. Cover and chill until ready to serve.

- In a medium saucepan over medium heat, melt the butter. Add the shallot and cook, stirring often, until it begins to brown about 3 minutes. Add the garlic and cook until fragrant, about 1 minute. Stir in the rest of the sauce ingredients, bring to a simmer, and reduce the heat to low. Simmer, stirring often, until slightly reduced, about 10 minutes. Transfer to a bowl to cool. Enjoy!

RED TOMATO KETCHUP
I found this great recipe on a Quebec recipe site. When you have many red tomatoes and want to make something special this is it! You can enjoy this condiment with hamburgers, hot dogs, any meats etc.

Steps:
- Blanch and peel tomatoes.
- Cut them in large chunks.
- Peel onions and apples.
- In processor pulse onions, celery, apples and peppers; do not pulverize them--leave them in approx 1/2-inch cubes.
- In large saucepan, stir everything together except the sugars.
- Cook medium low heat for 1 hour stirring now and then.
- Add sugars and continue cooking another 2 hours stirring now and then.
- Do not cover while cooking your ketchup!
- Pour into sterilized jars; wipe rim.
- Cover to seal.
