- Preheat oven to 375°. In a small bowl, combine sugars, flour and spices; set aside. In a large bowl, toss apples with lemon juice. Add sugar mixture; toss to coat. , On a lightly floured surface, roll one half of dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim even with rim. Add filling; dot with butter. Roll remaining dough to a 1/8-in.-thick circle. Place over filling. Trim, seal and flute edge. Cut slits in top. Beat egg white until foamy; brush over crust. Sprinkle with sugar. Cover edge loosely with foil. , Bake 25 minutes. Remove foil; bake until crust is golden brown and filling is bubbly, 20-25 minutes longer. Cool on a wire rack.

RED LION INN APPLE PIE
This was a requested recipe from an old Bon Appetit magazine. A marvelous apple pie with almonds and raisins in a crumb top.

- Grease 10-inch pie plate. Roll puff pastry dough 1/8 inch thick and fit into plate, cutting off excess with knife. Arrange apples over pastry.
- Place rack in middle of oven and preheat to 400*F.
- Combine water and sugar in small saucepan and bring to a boil over medium heat, stirring until sugar dissolves, then boil 10 minutes without stirring.
- Add dissolved cornstarch and stir constantly until thickened. Set aside for 15 minutes then stir in lemon juice and vanilla.
- Pour over apples.
- Thoroughly combine crumbs, butter, raisins and almonds. Mix in remaining ingredients and sprinkle evenly over apples.
- Bake 15 minutes; cover with foil and bake 30 minutes longer. Serve warm.

- Butter a 10-inch pie plate. Sprinkle the sliced apples with cinnamon and nutmeg, and mix together. Place the apples in the pie plate. For Custard: Beat together the ingredients for the Custard, and pour it over the apples. For Crumble: Mix together the ingredients for the Crumble, and cut in the butter. Sprinkle this over the apples, and press down lightly. Bake in a preheated oven at 325° for 1 hour. Serve with whipped cream. Refrigerate pies containing eggs (pumpkin, custard, cream pies); however, they don't freeze well. Fruit pies can be kept at room temperature or stored in frig, loosely covered, for two days. You can freeze a baked fruit pie up to four months. Freeze uncovered till frozen, then wrap tightly and return to freezer. To serve a double-crusted fruit pie, unwrap and thaw at room temperature one hour; heat pie at 375° on the lowest oven rack 35-40 minutes.

CINNAMON RED HOT APPLE PIE
Pie was one of Grandma's best dishes. This apple pie is made with cinnamon red hots and is just one of her best!

- 1. Mix apples, sugar and flour. Roll out half of dough; fit into 9-inch pie pan, allowing dough to overlap edges by an inch or so. Turn apple mixture into pastry. Dot with butter and red cinnamon candies. Drizzle on lemon juice.
- 2. If desired roll out remaining dough and cut 1/2-inch strips with pastry wheel. Lay lattice strips across top, weaving over and under if desired. Fold bottom pastry over strips and crimp edges to seal. If you do not wish to make a lattice top crust you may use a standard top pie crust but be sure to make cut outs or large slits in this crust to allow steam to escape while baking.
- 3. Bake at 425 degrees for 45 minutes, or until apples are tender.

- Sift flour with salt into mixing bowl; add almonds.
- Cut in shortening. Blend egg and water; sprinkle over flour mixture while stirring with fork until dough is just moist enough to hold together.
- Divide in half; form into balls. Flatten to about 1/2-in. thickness; smooth edges. Roll out one portion on floured surface to a circle 1-1/2 larger than inverted 9-inch pie pan. Fit loosely into pan.
- Cinna-Apple Filling: Combine sugar, pineapple juice and cinnamon candies. Bring to a boil, for 5 minutes.
- Prepare apples; coat with flour. Add sugar syrup; cook over medium heat, stirring constantly, until thickened. Pour into pastry-lined pan.
- Roll out remaining dough. Cut into strips 3/4 inches wide and crisscross over filling to form lattice over top.
- Trim and seal ends. Fold bottom crust over to cover; flute.
- Brush strips with reserved egg white, slightly beaten. Sprinkle with mixture of sugar and cinnamon.
- Bake in hot oven 425 degrees 10 minutes, then at 350 degrees for 25 to 30 minutes until crust is golden brown.
- Makes 1 9-inch pie.

In this very classic, cinnamon-scented pie, the apples are sautéed in butter before they're piled in the crust, ensuring that they're tender but not mushy. Use firm, crisp apples here, preferably all one kind so the slices cook evenly. Honeycrisp, Golden Delicious, Ginger Gold and Granny Smith apples are good options. (Honeycrisps will give you the sweetest pie, while Granny Smiths the most tart.) If using a glass or ceramic pie pan, consider parbaking the bottom crust. - Melt butter in a large skillet set over medium-high heat and add apples to the pan. Stir to coat with butter and cook, stirring occasionally, until the butter is evenly distributed, about 1 minute.
- In a small bowl, whisk together sugars, spices and salt. Sprinkle over the apples and toss to combine.
- Lower heat to medium and cook until apples have softened completely but still hold their shape, about 17 to 25 minutes. (Some varieties cook more quickly than others.)
- Sprinkle cornstarch evenly over the apples and continue to cook, stirring occasionally, until the apple mixture comes to a simmer and thickens slightly, about 2 minutes. Remove pan from heat, and stir in lemon juice and zest. Allow apples to cool completely (spreading them onto a rimmed baking sheet speeds this up). Apples can be prepared up to 24 hours ahead and refrigerated.
- On a lightly floured surface, roll half of the pie dough into a 12-inch circle. Transfer dough to a 9- or 10-inch metal pie plate, trimming it to leave a 1/2-inch overhang. Place crust in the freezer for 30 minutes or up to 24 hours.
- When ready to bake, place a rimmed baking sheet on the middle oven rack and heat oven to 425 degrees.
- Roll out the remaining dough on a lightly floured surface to a 10- to 11-inch circle. Remove pie crust from freezer and add the cooled filling in an even layer. Cover apples with remaining dough. Press the edges together, trim the excess dough, and crimp the edges with your fingers or a press down with the tines of a fork. (Using a fork might be easier if the bottom crust is too cold to crimp.) Brush the top of the pie with cream, milk, or some beaten egg, then sprinkle lightly with sugar if you like. Using a sharp knife, cut some steam vents in the top of the crust.
- Place pie on the hot sheet pan and bake for 20 minutes. - Preheat oven to 425 degrees F (220 degrees C).
- Melt butter in saucepan over medium heat. Stir in white sugar, brown sugar, salt, cinnamon, and water. Bring the syrup to a boil, stirring constantly to dissolve sugar, then remove from heat.
- Unroll pie crusts, press one into a 9-inch pie dish, and place the apples into the crust. Unroll the second crust on a work surface, and cut into about 8 1-inch wide strips.
