Steps:
- Place rice and lentils in a bowl, cover with water and let soak for 8 hours.
- Drain off water, reserve.Place rice and lentils in a food processer and blend till smooth. Blend in water.
- Scrape into a bowl, cover with plastic wrap and let ferment for 24 hours.
- Stir in the rest of the ingredients. Heat a frying pan and add a little oil.
- Spread 3 tbsp of batter in the pan into a 15 cm dosa.
- Cook for 2 minutes, until set. Drizzle a little oil over the dosa and flip. Cook for another minute.
- Keep them warm in the oven while making the others.

RED LENTIL DOSAS
An Indian pancake traditionally eaten as a breakfast dish. I found this little beauty in The Bread and Bread Machine Bible and amazingly I didn't have to change a thing,,,made with rice and lentils it's naturally gluten free and relatively low carb. And no I haven't made a mistake the prep time really is 2 days,,,but so worth the wait...The recipe only makes six Dosas so to make the effort worthwhile why not multiply the ingredients and freeze them. If you prefer a kick then add a finely chopped chilli to the batter before cooking.

Steps:
- Place the rice and lentils in a bowl, cover with the warm water.
- Leave to soak in the warm water for 8 hours.
- Drain off the excess water and retain.
- Using a food processor, blend the rice and lentils together until smooth.
- Blend in the reserved water.
- Place in a large bowl and cover with cling film.
- Leave in a warm place to ferment for about 24 hours.
- Stir in the seasoning and spices.
- Heat a heavy frying pan, over a medium heat until hot.
- Add the oil and when just beginning to smoke add 2-3 tablespoons of batter.
- Spread the dosa out into a 6inch diameter.
- Cook for approximately 2 mins or until set.
- Drizzle a little of the oil over the dosa and turn over and cook for a further minute.
- Serve warm with chutney or relish.

- Place the rice in a large bowl and cover with 4 cups filtered warm water. In a second bowl, repeat the steps by covering the lentils with 2 cups of water. Add 1 tablespoon vinegar to each bowl, then cover each bowl with a tea towel or other loose cloth and let both bowls sit overnight (8 to 12 hours) at room temperature.
- Drain water from both bowls, then in a food processor, blend rice and lentils separately, adding water to create to a smooth, creamy texture. I usually add approximately 2 cups water to the rice and 1 cup water to the lentils, but add the water slowly so the mixtures don't get too runny.
- Once both mixtures are very smooth, blend or stir both purées together with the salt, adding more warm water if needed to make the batter the consistency of thick cream.
- Pour mixture into a large bowl and cover, then let it sit for another 18-24 hours in a warm place, such as on top of the fridge. The mixture will expand - sometimes as much as doubling, depending on temperature - so use a bowl that's large enough to accommodate a bubbly, happy batter.

- Heat the coconut oil in a skillet or saucepan. Add the chopped onions, and sauté for 2-3 minutes until translucent. Then add the garlic and ginger sauté for another minute until fragrant. Lastly, add the spices, and sauté for a few seconds to unfold flavors.
- Place the lentils in a fine-mashed sieve and rinse until cold running water. Then add them to the onion mixture in the skillet. Pour in the vegetable broth, stir to combine, and bring to a simmer. Cook covered for 8-10 minutes, or until the lentils have absorbed most of the liquid.
- Add the coconut milk and strained tomatoes (if using) and simmer another 5-10 minutes, or until the lentils are tender. (If the sauce is too thick, add a little more broth or coconut milk, until the desired consistency is reached). Season with salt, pepper, coconut sugar, and lime juice to taste.
