WATERMELON BLUEBERRY SALAD WITH BALSAMIC DRESSING

I really wanted to showcase the 18 year aged balsamic I recently purchased so I have made this quick and fresh watermelon blueberry salad. The balsamic brings out the freshness of the watermelon and blueberries and saltiness of the feta cheese. This is a great side dish to bring to a cookout or a wonderful light refreshing snack to eat whenever you want! I'm sure this won't be a problem but try to eat it up the same day you make it otherwise the liquid from the watermelon and dressing will make the cheese wet. Here is a little more about the oil and vinegar used in this recipe: Koroneiki Olive Oil: Koroneiki is a Greek olive that is small in size but high in levels of poly-phenols, the natural antioxidants found in plants that may reduce the risk of heart disease and cancer. This olive oil is very robust and a great staple olive oil for any cook's kitchen. Aged Balsamic Vinegar: It is aged 18 years in chestnut, oak, mulberry cherry and ash barrels. It is very rich and dense Uses: The applications are endless for this vinegar. Excellent for salad dressings, marinades, glazes, pan sauces, soups, pickling, grilling, over ice cream, cheese, and fresh fruit.

Watermelon Blueberry Salad With Balsamic Dressing image

Steps:

  • In a large bowl, whisk the balsamic, olive oil, and salt and pepper.
  • Carefully toss the cubed watermelon, blueberries, and parsley or mint.
  • Let it chill for about 5-20 minutes in the fridge and eat up with in the day.

4 -5 cups of cubed watermelon (1/4 of a watermelon)
1 cup fresh blueberries
1/3 cup crumbled feta or 1/3 cup goat cheese
1 1/2 tablespoons aged balsamic vinegar (can substitute regular balsamic)
1 tablespoon koroneiki olive oil (can substitute extra virgin olive oil)
1 pinch salt and black pepper
2 tablespoons fresh parsley or 2 tablespoons mint, chopped

Reduction Essentials: Balsamic, Blueberry, Walnuts image

Steps:

  • 1. PREP/PREPARE
  • 2. You will need a small saucepan to make this recipe.
  • 3. This is the time to pull out that good balsamic, and wine.
  • 4. Gather your ingredients (mise en place).
  • 5. Add the butter to a small saucepan, over medium heat.
  • 6. After the butter melts, add the coconut sugar and garlic, and cook for about 60 seconds, stirring constantly.
  • 7. Add the wine, balsamic vinegar, blueberries, and walnuts.
  • 8. Reduce the heat until you see steam coming off the surface but no bubbles. Allow it to slowly evaporate, until reduced by half, about 25 - 30 minutes.
  • 9. NEVER allow this sauce to get to a simmer. If you do, it will burn, and you will have to start all over.
  • 10. While it is simmering give is a whisk now-and-then, and add pinch of salt and pepper, to taste.
  • 11. Take off the heat and allow to sit for a few minutes.
  • 12. PLATE/PRESENT
  • 13. Serve over your favorite steak or salad. Enjoy.
  • 14. Keep the faith, and keep cooking.

PLAN/PURCHASE
1 Tbsp sweet butter, unsalted
1 Tbsp coconut sugar
1 clove clove, minced
1/3 c red wine, dry variety
1/3 c good balsamic vinegar
1/4 c dried blueberries
1/4 c walnuts, chopped
ADDITIONAL INGREDIENTS
1 - 2 pinch salt, kosher variety
1 - 2 pinch white pepper, freshly ground

SPRING SALAD WITH BLUEBERRY BALSAMIC DRESSING

Quick and easy salad and so healthy! Delicious blend of fruit and greens! You can substitute goat cheese for the blue cheese, if desired. You can substitute pecans or almonds for the walnuts, if desired. You can substitute maple syrup for the honey, if desired.

  • Toss spring greens, strawberries, 1 cup blueberries, blue cheese, and walnuts together in a bowl.

Blueberry Balsamic Vinegar image

Steps:

  • In a large non-reactive saucepan, crush blueberries with a potato masher or back of a heavy spoon. Add vinegar, sugar, lime and cinnamon and bring to a boil. Reduce heat and simmer, covered, for 20 minutes. Cool slightly and pour into a large bowl. Cover and refrigerate for 2 days to allow flavors to blend.
  • Place a wire mesh strainer over a large bowl. In batches, ladle blueberry mixture into strainer, pressing out as much liquid as possible. Discard solids.
  • Pour vinegar into clean glass bottles or jars, and refrigerate, tightly covered, indefinitely. Use in salad dressings or drizzled over chicken or beef.
